Hey everyone. Just wanting to give y'all an update. Some of you know and some of you may not know but we are expecting a baby girl come October. With that said, I'm officially in the 3rd trimester and things are just getting hard. Some of you are aware of other things going on but some aren't and I'm sorry but I'm not putting it out on social media. With this said I will be taking a break from baking so I can focus on me and baby. With that said, the orders that are in will be filled then I will cut back on things. I can continue to do sourdough bread because it is not very labor intensive and I can do some quick breads such as sandwich bread but labor intense things such as cinnamon rolls, pretzels, rolls, ect. Will be put on hold for now. If it becomes too much for those I will update y'all. Also I will be completely down while on maternity leave but will start back up as soon as I can and will update y'all as to when things stop and start up again

I posted a while back about the vanilla paste and extract being ready. I filled the preorders that were received and I still have lots of paste and extract left over so if anyone would like some (or. You liked what you received and would like more) just let me know and I can get some to you! I have Ugandan vanilla paste, Madagascar vanilla paste and Ugandan vanilla extract all ready and available

Not much going on this weekend in the kitchen but made 3 loaves of sandwich bread today 😊

Hey y'all. Just letting everyone know that the Uganda vanilla paste is ready and I will have some Madagascar vanilla paste ready this weekend! I'm going to order some jars and will contact those of you that have preordered some of the Ugandan paste once they are in and ready. I'm also going to get the viles in for the extract.

In addition I have Uganda vanilla extract that is ready as well!

I have done some taste testing and personally, I cannot catch much of the chocolate flavor that's in the Ugandan beans so I don't think it will be that noticeable unless you're a vanilla connoisseur πŸ˜†

The 5 loaves of bread from my post last night! I love seeing how each and every loaf turns out different even then they're all made the exact same way at the exact same time! πŸ₯°

Hey Y'all. Finally got a time lapse done of my starter rising. I did it with my experimental starter (on the right) and my normal starter (on the left)

This was a large feed and with cold water in a cold room so it took a while to rise but I love seeing the fast forward time lapse video. It's just so enjoyable and satisfying!

This would have been a better view of the rise had I made the starters larger than just 60 grams but I like keeping small starters as there is not much discard with them when you go to feed again plus it's so easy to just upscale it when getting ready to use.

I was home with a Migraine yesterday when I decided to record this so I didn't do a lot of things that I wanted to do but this was a great start to hopefully many time lapse videos to come!

Experiment time!

I've made a stuff starter in the past but never really maintained it due to how difficult it is to mix.

A true stiff starter is only 50% hydration so you would be mixing only 50 grams of water into 100 grams of flour to which I use half bread flour and half whole wheat flour which are pretty thirsty flours (especially the whole wheat) so it is just really difficult and a lot of work! If you aren't familiar with weighing things then think of it as mixing only 1/4 cup of water into 1 cup of flour!

Well I'm going to try a semi stiff starter.

Below is a picture of my semi stiff starter on the left and my normal 100% hydration starter on the right. I plan to monitor and compare how well these 2 different hydrations rise and then I plan on making a loaf of bread with them and comparing the overall texture, rise and flavor.

Supposedly the semi stiff starter will be slightly less sour than my normal starter but it should also make much better bread so we will see how they compare come the weekend or beginning of next week 😁

Happy New Year everyone! Any new year's resolutions out there?
