I always laugh when I say Brugos is “just a pizza place” because then I look at what comes out of our kitchen and think... well, we may have gotten a little carried away....
But really, this started long before Brugos. It was in my blood...I had no choice...
I grew up in a restaurant family, with Alioto’s on the Wharf part of that world, Aunt Ida, my Mom, all those kitchens and tables and people cooking and arguing and tasting and feeding everybody, so when Troy and I opened Brugos I only really knew one thing... what people love to sit down and have for dinner.
Troy, on the other hand, is the dreamer.
Which is probably how we ended up with half the things on this menu.
I’m the one saying, “People love Chicken Marsala.”
He’s the one saying, “What if we put THIS on a pizza?”
And somehow, against all odds, this has worked out well for both of us and Brugos!!
Pizza really is our heart and probably always will be. Dough made here, sauces made here, hand tossed when you order it, and all those pizzas we dreamed up over the years because neither one of us has ever been very good at leaving perfectly good pizza alone.
Then, very slowly, we started adding the rest of dinner.
A pasta because there was a story behind it. A family recipe because I missed it. Something Mom made. Something Aunt Ida made. Something I grew up with at home or around restaurants and thought... people still love this.
And wonders of wonders, they did.
So in came the Chicken Parmesan, Chicken Marsala, Chicken Piccata, Spaghetti & Meatballs, Mom’s Spinach Salad, lasagna, Fettuccini Alfredo... some traditional, some a little less traditional, some definitely Troy’s fault.
And somewhere along the way I realized I had done something I never really planned to do.
I had put my family’s kitchen inside Brugos.
Not exactly, because no Italian family has ever made anything exactly the same way twice and lived to tell about it, but the feeling of it... yes.
The recipes, the stories, the music, the food I grew up with, the things people really do want when they sit down and say, “What sounds good?”
Twenty years later I look around and see so many of the things we were doing way back then showing up everywhere now, and I have to smile a little.
Not because I think we invented Italian food. Good Lord, my family would come back and haunt me.
But we were doing it our way a long time ago, and I’m proud of that.
Mostly though, I’m grateful.
Because Brugos really did become what I hoped it would be... our home. A little traditional, a little eclectic, a little Troy, a lot of family, and somehow it all fits.
Tonight we’ve got our Mama Mia Spicy Shrimp over Angel Hair, Pat will be behind the BAR making those icy cold martinis, Diana Krall will be playing, and our $8.50 Premium Happy Hour at the BAR is 4–6 PM.
So yes... Brugos is still a pizza place....we just wandered a little...okay we wandered alot..but that's the only way I would have it!!! So here we are...Twenty years worth of it...!!!
