Missed cut-off for getting this in the Courier this week (darn). HELP a girl out and share this as much as possible. Many people have scavenged sheds, attached attics, and bombarded basements to make this sale happen. TREASURES abound. Sorry if this is duplication - wanted to reach everyone who might be interested. Thanks for SHARING! NOW taking applications for a new Independent Christian K-5 school opening in Carthage, fall 2022. The school will have three certified teachers with multiple advanced degrees and over 100 years of teaching experience. Additionally, we will have a youth minister with 17 years of experience, including choir and theater, and who holds a degree in music. The teacher to pupil ratio will average 5 students per teacher.

We can explain the application process for the VERY limited seats available. We will be hosting an OPEN HOUSE the week of January 24 at our current location. PM Pam Petty for details. We have a lot to offer and it is too much to put in a post. Meet the teachers, parents, and current students. See what a small teacher-to-student ratio can do for your child’s learning. No pressure, just an opportunity for you to see what an independent school can provide.

The school will feature individualized instruction and students will be challenged to work to proficiency in all subject areas. The christian-based curriculum will focus on excellence in reading, math, science and interdisciplinary studies in social studies and global learning. Students will have daily music instruction and focus on hands-on, experiential learning. Dr. Petty has advanced degrees in reading/literacy and is credentialed to provide diagnostic testing and on-going assessment in reading and language arts. We believe in the Bible being an important part of a child’s education and seek to educate the whole-child with emphasis on the physical, spiritual, emotional, and general well-being of each child. The school will follow the same calendar as the local school system and students will be eligible to participate in all sports teams and extra curricular activities in the school system (under homeschool umbrella).

We will work together as a team to build a school culture that supports students’ social-emotional and academic growth. Lessons will focus on the basics building to higher-order, scaffolded learning experiences that are thought-provoking and help students build confidence, be engaged in their own learning, and develop leadership qualities.

Thank you all so much for your patronage over the last few months. It has been a joy to see you and to know you are enjoying our foods. I need to take a break for a while but am expecting to come back when the air gets a bite in it. I will have hot and comforting soups! Hot. It is too hot for me. Standing over a hot stove for soup this week would push me over the edge/ledge. Let’s keep it cool! Check out these new salads:

Honeycrisp Apple Salad - apples plus arugula, walnuts, red lettuce or frisée as available. Sweet and tart vinaigrette make the salad pop.

Cherry and Bulgur Salad - heads up healthy grain people! Tart dried cherries, cucumbers, red onions, and mint are blended with bulgur (1/2 the calories and fat of farro!) a chewy, nutty grain. Each day it tastes better until it is all gone!

Kale makes a come-back in this Sweet Pepper and Kale Salad — Grilled sweet red, yellow, and green peppers tossed with cherry tomatoes, torn kale, mozzarella balls/cubes, and pickled red onions (very, very mild) and garnished with customized croutons. You can eat cold, room temp, or even heat in oven until mozz starts to melt. Chunky salad. Dressing is mild.

Spinach and Artichoke Pasta Salad - Eat it cold or dump it in a casserole dish and use as a side or a dip with crusty bread. Destined to be a crowd fav. Should eat one or more of the other salads to balance out the indulgence of this one!!

So, gazpacho is an uncooked, blended soup that originated in Spain. I make it with fresh vegetables grown in Smith County - fresh tomatoes, cucumbers, onions, and peppers. Think blend between a bloody mary and a salad sans lettuce with minced ingredients. A burst of flavor in every spoon or sip. Want to try some without the $12 commitment? Let’s keep it on the COOL side for the 4th of July festivities!

GAZPACHO - a Spanish cold soup that is chocked full of fresh veggies - tomatoes, cucumbers, onions, celery and sweet green and red peppers. You can eat it in a bowl or sip it from a glass. You can add some libations to make it the hit of the party. $12/32 oz.

Red, White and Blue Salad - fruit based salad with strawberries (red), feta cheese (white), and blueberries (blue) nestled in a bed of red lettuce and garnished with almonds and a light sweet/tart dressing served on the side. KNOCKOUT as a side for 4th of July picnics. $12/32 oz

FIREWORKS PASTA SALAD - tri-colored twisty-pasta with red onions, tomatoes, hearts of palm, feta cheese and black olives. Roasted red pepper dressing on the side is the BOMB! $12/32 oz.

One more must have: SHAVED BRUSSEL SPROUTS Salad - FORGET everything you ever thought about bitter, overcooked boiled Brussel sprouts - instead look forward to a nest of thinly shaved (think mandolin) tender sprouts with green onions, white cheddar cheese, apples and pecans. Let’s get our ”Freek” on this week with a FREEKAH and Spinach salad!! FREEKAH is an ancient grain that is harvested from wheat. It is a staple in the Middle East and in Africa. It has a nutty flavor and is considered a super food. Mixed with spinach, cucumbers, red onions, almonds and dried cranberries. Garnished with feta cheese and a light lemony dressing. $12/32 oz.

Kale fans gather round! I am doing a kale and Mexican Street Corn salad this week. Has a Tex-Mex flavor and is topped with chopped, grilled chicken. A whole meal in a bowl! $12/32 oz.

Pho Beef Noodle Soup - Rice noodles (same as I used in the Asian Noodle Salad last week), in a spicy broth with very thinly sliced beef, bean sprouts, green onions and cilantro. Sliced jalapeños make this a full-flavored soup that will wake you up! If you want the jalapenos on the side I can do that. $12/32oz.

Club Sandwich Salad - turkey, ham, cheese piled on iceberg lettuce. Topped with cherry tomatoes and bacon - served with homemade bacon-Ranch-style dressing. $12/oz.

Hello fine folks! Soup/Salads pickup for Saturday, June 19 - 301 Upper Ferry Road between 1:00 - 2:30.

Asian Garlic Noodle Salad - Rice vermicelli noodles in a light vinegar-based dressing with Asian chili-garlic sauce - mixed with carrots, cucumbers, red cabbage, and snow peas (or bean sprouts depending upon availability). Light, summery.

Farro and Fruit Salad - The ancient grain and super food, farro, mixed with blueberries, apples, pears and crumbled cheese.

Club Sandwich Salad - Tried and true: Iceberg lettuce, ham, turkey, cheese, tomatoes and homemade, creamy dressing with bacon.

Tomato tortellini soup - every bite is delicious. What you love in tomato basil soup with the yumminess of cheese stuffed tortellini - turn the air conditioner down 2 degrees and enjoy a big bowl!

All $12/32 ounces each. Please try to order by Thursday, June 17 by end of day.
