• Raw shrimp was placed directly on a cutting board, and food preparation continued on the same surface without cleaning and sanitizing it first. The cutting board was cleaned and sanitized. (9 points, repeat)

• Several chemical spray bottles were not labeled with their contents. The bottles were labeled during the inspection. (4 points)

• Hand soap was stored on a prep counter/cutting board at the sushi bar. It was moved to a separate area. (4 points)

• A sanitizer bucket at the bar measured below 10 ppm chlorine instead of the required 50–100 ppm. More bleach was added to correct the concentration. (3 points)
