Thank you to everyone who came out for Izakaya Night last night.

We had a full room, seven courses, a whole lot of sake, and night full of anxiety, panic, and frustration. But, aside from the staff in the kitchen, all the guests in the dining room seemed to be having a great time!

It wasn't without a few hiccups, and dinner definitely took a little longer than we planned. But everyone was incredibly patient, the room stayed full of good energy, and people seemed to be having a really good time. We hope it was worth the wait.

We put a lot into this one, and seeing everyone show up excited, try some things they might not normally order, drink some really good sake, and spend the night with us made all of it worth it.

As for today, it turns out we are no longer spry 20-somethings who can pull off a night like that and wake up ready to go. Recovery now involves Icy Hot, heating pads, Advil, and apparently several business days.

Seriously, thank you to everyone who came, and a huge thank you to everyone that helped get us through it last night. Once we recover, we might have to think about doing it again.

Here we are now. Open for regular service tonight and tomorrow. We have some new specials too!

We're full for Izakaya Night on Thursday!

It's been really fun seeing so many of you get excited about it. When we do different events and dinners like this, I'm always worried that people won't come out and we're going to be the only people at our own birthday party.

Izakaya at Griff's is this Thursday, August 13, and we'd love to have you.

We're doing a seven-course, izakaya-inspired dinner with five guided sake tastings here at Griff's Kitchen & Bar.
One of the sakes we'll be pouring is Kawatsuru "Olive" Junmai Ginjo, paired with scallop sashimi with grated daikon, ginger, wasabi and ponzu. It's bright, clean, lightly aromatic and has a gentle savory edge that should be really nice with the scallop.

The full dinner includes:
-Three seasonal appetizers
-Clear clam broth with littleneck clams, mitsuba and yuzu
-Scallop sashimi with daikon, ginger, wasabi and soy or ponzu
-Tare-glazed chicken; simmered daikon with pork-miso sauce
-Corn kakiage with matcha salt
-Japanese rice, miso soup and house pickles
-Summer fruit with sencha granita and shiso syrup

Along with the food, Dila Lee of Komé Collective will guide everyone through five sake tastings during the meal.
This is meant to be a fun, approachable dinner whether you already love sake or have never really explored it before.

We'll also have a small number of bottles available for purchase, so if you try something you love, you may be able to take a bottle home or place an order for more.

The sake has officially arrived!

These are the five bottles Dila Lee of Komé Collective selected for Izakaya Night next Thursday. Each one will be paired with a different course throughout the dinner. Guests will also have the opportunity to purchase bottles from the featured lineup after dinner, including several sakes that are not always easy to find locally.

We'll start with Fukucho Forgotten Fortune alongside the seasonal appetizers, then move through Everlasting Roots with the clear clam broth, Kawatsuru Olive with the scallop sashimi, Divine Droplets with the tare-glazed chicken and simmered daikon, and Yuho Rhythm of the Centuries with the corn kakiage.

You do not need to know what junmai, ginjo, daiginjo or kimoto mean before you come. That's part of why Dila will be here. She'll guide us through each pour, explain what makes it different and why it works with the food.

Izakaya Night is one week from tonight, and more than half of the seats are already spoken for.

One of the things I really appreciated about Japan was how much care people seemed to put into their work, especially the cooks.

If you're a yakitori chef, that's what you cook. Skewered food over a charcoal grill. It sounds simple, but it takes years and years to really become an expert at it.

Some yakitori chefs in Japan can get more than 18 different skewers from one whole chicken. There is almost no waste. Every part gets used. Literally.

Here's a little testing for next week's sake dinner.

Each skewer uses a different part of the chicken thigh. Inner thigh (aka or obi), outer thigh (momo), and thigh meat wrapped in chicken skin (momo dakimi).

I have a lot more years of apprencticing but, these were pretty good.

Also, a quick Izakaya Night ticket update: if you tried to buy tickets over the last few days and got tangled up in the online ordering process, you weren't imagining it. We had a few kinks to work out.
