What does anaerobic mean? During this process, freshly harvested coffee cherries are fermented in a sealed, oxygen-free environment for 72 hours. This controlled fermentation helps develop deeper fruit sweetness, vibrant aromatics, and more complex flavors before the coffee is dried.
