Every position in a restaurant is important, but in a scratch kitchen especially, the kitchen team is the heart and soul of the business. In our restaurant in particular, our kitchen team has to do millions of dollars in sales in a kitchen built for a fraction of that.

Bobby and Minoli encapsulate all the core values of Vita Momenti. With combined professional experience of over 60 years as professional chefs, they are masters of their craft. But even more important than their culinary aptitude, they are men of integrity, loyalty, and natural leadership.

Even under the most intense pressure they act with respect, patience, and precision.

The last two years saw a higher percentage of previously successful and stable restaurants close their doors than in the last 50 years.

The number one cause of restaurants going out of business is rising food and supply cost. Not only do rising cost chew into profit margins, but they often enforce price hikes which in turn alienate and exclude their customer base from being able to afford their product. 

Because of the massive volume of our restaurant we spend tens of thousand dollars a week and hundreds of thousands of dollars a year just on base ingredients.

We believe in doing everything in our power to combat rising prices with the tools at our disposal, which include owners and managers using their time to constantly shop and comparison price the products we use in our business. We are constantly negotiating with our food reps to reduce our prices and shopping competitively across various companies, pressuring local governments to eliminate unnecessary taxes, and maximizing efficiency across every aspect of our process from prep to presentation.

The slow creep of cost has been the death of many good businesses, and we work hard every day to ensure that we remain unaffected by those subtle hikes so that we can continue to offer high quality products at non prohibitive price points.

We are expanding our front of house team and looking to add a part time togo server/host. The ideal candidate is outgoing, able to efficiently multitask, and provides a positive first interaction with guests dining in and executes all togo orders.

Due to the high volume of togo orders we receive this is not a traditional hosting position but rather acts primarily as a togo server. Due to the volume, typical gratuities double to triple the hourly wage.

We wanted to extend our sincere gratitude for all of our guests who exhibited extra patience tonight after longer than normal wait times.

As a frame of reference on a typical busy Sunday we serve between 120-150 meals at dinner which already maxes out our space. Tonight for whatever reason we served over 350 in a two hour period

We have also made the decision that any time wait times approach our maximum, we will immediately shut down all 3rd party app services such as Uber and DoorDash. Our priority will always be with our in house guests and direct orders from call ins and online orders directly through our website.

Maxing out a space is a wonderful problem to have and it requires active adjustment as to not negatively impact the guest experience. Thank you for being the best customers out there.

There are many reasons we do not have an in house delivery fleet at Vita Momenti. However, when we receive an early morning call from someone out of state who tells us that their friends in Lake Forest Park love our restaurant and and it would mean a lot for them to receive a large delivery from us, we make it happen. That’s just being local!
