In Honor of Juneteenth I would like to Celebrate my Grandmother Annie Florence Cox
Born in Clark County Alabama she was the direct descendant of slaves
Sadly I wasn’t granted the opportunity & pleasure of meeting my grandmother as she died of complications from being shot by my grandfather two years before I was born in 1967 . I really wasn’t close with my paternal side of the family aside from a few cousins .
So alot of history and stories were lost or unknown to me until recently when I did my DNA . I’ve since found out that she was an incredible host and cook . People would come from all over the state to buy her divinity . She was a Single Mother to 3 boys and worked her entire life providing for them . Hard working & talented . How ironic that I would follow so closely in her footsteps having never met . I feel a deep connection with her , I wish I could have met and hugged her, I know she just gave the best hugs .

I find it both an honor and a privilege to be the Granddaughter of such beautiful giving and talented & strong women with good values . Cooking and entertaining is deeply imbedded in my soul .

I would someday love to create something special to honor them and name it Katy & Flo’s

I’ve always pushed the envelope and bet on myself
Long before I was in the Beauty or culinary industry.
As young as 10 I was cutting my hair or coloring it .
I really loved this mullet with cheetah print sides 😝
Expressing your individuality is so important even if others don’t see the vision.
I love art and tho many will question why I left an industry I was so passionate about to pursue cooking ? My reply is simple
I used to creat visual art that made people feel good from the outside in , now I create visual edible art and make people feel good from the inside out ❤️

Never lose yourself keep doing what makes you happy .

Yesterday at the cafe we had Benny’s and stuffed French toast ❤️
I love that I have so much creative freedom at the Hospital 🙏🏽
It allows me raise the bar for our healthcare workers & families visiting their loved ones at a vulnerable time.
The expressions on a few Dr’s faces yesterday as I was filling the hot table lets me know they appreciate my efforts.

Born April 6th 1969
Where’s my Gen Xers

We witnessed the world transition from Analog to digital

Drank from a garden hose

Experienced 5 decades

Raised ourselves and our siblings

Cooked entire meals from scratch

Memorized more than 20 phone numbers
I still remember ours (714)774-3598
But can’t remember why I came into the other room currently 😅

Our knees can tell us when rain is in the forecast

Made cassette tapes of the radio

Didn’t have a cell phone
We rode bikes or skates to find our friends

We figured it out with critical thinking skills in real time

We are survivors

And most of us have excellent taste in music

I’ve been craving our breakfast tacos 🌮 so badly lately 😅
So this morning I treated us to some ❤️
You know when you get that itch for something and nothing else is going to scratch it right
I’m ashamed to say how long I’ve been craving these to the point I obsess every Saturday morning

Although they are simple enough it’s all the elements coming together in unison that I typically talk myself out of the kitchen 😂
I need that fire roasted green salsa that we make in house then add steak and fresh cilantro.
I would typically have 1 ingredient on hand on previous days and didn’t feel like making a trip to town on my day off to make a big production out of a few breakfast tacos 🌮

But today all the stars aligned 🙏🏽
I had froze some salsa from last weekends Asada cookout .
Tucked away a lil carne , one of our dear friends who happens to be a security guard at the hospital delivered us some farm fresh eggs earlier in the week.

And baby when I tell you my heart is so grateful this morning ❤️

My itch has officially been scratched 🥰

I want to thank y’all for always loving and supporting us 🙌

I don’t get to say yes to much lately outside of work
But I look forward when I can
