This is similar to the citrus slaw in my cookbook:
🥬 1 small head red cabbage finely chopped
🌿1/2 C fresh basil, mint, lemon balm
🍊1/2 orange juiced
🍋‍🟩 1/2 lime juiced
🧂 hefty pinch sea salt
🌱 1/2c pumpkin seeds
🌼 1/2 C freshly picked dandelions (make sure they haven’t been peed on or sprayed w pesticides etc)
✨✨✨✨
Massage cabbage w sea salt & juices
Add remaining ingredients and top w dandelions
✨✨✨✨
Dandelion flowers are SO amazing!
🌼 Rich in flavonols & polyphenols to fight oxidative stress
🌼 Rich in vitamins A,C calcium, potassium
🌼 supports digestion (they’re a little bitter & that’s what makes them so good for digestion & liver!)

Spring has sprung in our kitchen!
Mango salsa over chicken served in butter leaf lettuce cups. This my friends is one of the best way to get your retinol intake! Yellow and orange foods are chock full of skin protective nutrients!
🥭 Mango salsa recipe:
2 mango diced
1 jalapeño
1 lime juice and zest of
1 green onion sliced
Cilantro
Cucumber diced
Extra virgin olive oil
Pinch of sea salt & cumin
🥭🌶️
Toss all together and serve over grilled and diced chicken thighs. I seasoned the thighs with salt, pepper, garlic

This cabbage salad is too good not to share! An easy way to get your cruciferous in!
🥬 1 small purple cabbage finely diced
🥬 1 baby bok choy finely diced
🥬 2 scallion finely diced
🥬 1/2 C pistachio nuts chopped
🥬 1 clove garlic minced
🥬 juice of half a lime, lemon and orange more to taste once blended
🥬 1/4 c chopped cilantro or herb of choice
🥬 drizzle of EVOO
Mix together and enjoy!

Rainy spring days call for lemony garlicky chicken soup!

I made a roasted chicken last 3 meals! The final being this chicken soup.
🐓 1-2c shredded roast chicken
🍲 1 onion
🥣 5 garlic cloves
🍲 1/2 small celeriac root diced
🥣 2 carrots diced
🍲 1 c cooked brown rice (optional)
🥣 24 oz chicken broth or water
Lemon zest of entire Lemon
1/4 c fresh parsley diced
Salt n’ pepper to taste
🥣🍲🥣🍲🥣🍲🥣
Cook onion and garlic in extra virgin fresh pressed olive oil until translucent. Add carrots & celeriac.
Cook 5 minutes
Add broth, rice and chicken
Simmer for 30 minutes and add lemon zest and parsley

Inspired by a friend who brought a bowl of love to me during hard times. I cried over this bowl of loving intention and nourishment. So here’s my version (template):
🥗
Bowl of Love:
🤍Roasted butternut squash
🤍 roasted beets
🤍 cucumbers
🤍purple cabbage
🤍 carrots
🤍Scallions
🤍 purple radish
🤍 Cured baby lemons (optional)
🤍 Avocado
🤍 rice at bottom (can sun for cauli rice)
🤍 topper: pistachios & tart cherries
🥗🥗🥗🥗🥗🥗🥗🥗🥗🥗🥗
Dressing:
🌿1/4 c cashews
🌿 1/4c water
🌿 Half Meyer lemon juice / or lime
🌿 1/4c argon oil (or sesame)
🌿 1 TBL ginger lemon shrub (or acv)
🌿 1/2 c fresh cilantro or herb of choice
🌿 Clove of garlic
🌿 dash of honey or maple syrup
🌿 sea salt n’ pepper to taste
Blend all ingredients in blender til smooth and voila!

Why is this recipe so good for you!!?
