Something is simmering...

Over the last couple of years, one of the most requested things I’ve heard is:

“When are you bringing ramen back?”

The response to our last story was incredible.

I’m working on something new for Bozeman.

Fresh noodles.
Seasonal ingredients.
Chef-prepared broths.
Simple finishing at home.

More details soon.

Spot prawn carpaccio. Honored to step in next week at Izakaya Three Fish while Paul is away — truly excited to carry the torch in such a special space.

We’re leaning into an almost Tanoshii style experience, with a few of my own dishes layered in—clean, expressive plates built around pristine fish, subtle depth, and a few playful “gummy bites” throughout the progression.

We’ll also be running an open menu format Tanoshii style and omakase — same program, same spirit, just a slightly different lens.

Seatings:
Thursday–Sunday
5:00 PM & 7:30 PM

It’s going to be intimate, creative, and ingredient-driven. Would love to see you there.
