We are making some new and old dishes for this week! We are bringing back the Creole Muffaletta with Artichoke salad for our friends who do not like olives, king cake bread pudding is coming back with lemon filling, our natural Lobster bisque, crawfish Etouffee, red beans and more! We are adding a cool shrimp dish called Creole Shrimp Tchefuncte and the beloved Sticky Chicken!

I know times are hard for folks so I am also Cutting my prices as much as I can and we are making ½ portions on many things!

We want to express how important it is that orders are placed through messenger because have a line of communication when our times change when we are delivering.

Please message us with your order and pickup spot in messenger. To order message us your full order…this will be cash only prices do not include any delivery charge or tips if you wish to add something extra we are grateful and humbled we will have a limited cash bank. We can take zelle but please consider leaving a tip for my team as most of you know I am limited in my mobility and they are the “backbone” of my overall business.

This is the Pork Cordon Bleu on top we made a Swiss cheese mornay sauce with Dijon mustard....the bottom is the Caribbean room grouper with Peppers, onions, garlic, Seafood Stock and Sherry wine this is an excellent sauce for grouper!

This is how we make our Maque Choux we use fresh sweet corn then we make what I call Cobb stock....he stock is so good and really puts a great flavor base to the Maque Choux! Yep more steps but it matters! ☮❤🙏

Caribbean Room Grouper – This is a dish that brings back a great many memories for me….it started at the Bimini Shack in Lauderdale in the 70’s they made an excellent Bimini Grouper with peppers, onions, sherry wine, herbs, seafood stock and shrimp. I played with the dish in the mid 80’s adding more herbs and taking out the Scotch Bonnets I have made it at home a few times but want to do it again…an 8 oz. chunk of Grouper in my sauce served with roasted potatoes….$32.00 / Half…$18.00

Pork Tenderloin Cordon Bleu – Butterflied pork tenderloin stuffed with natural smoked ham, Swiss cheese and spinach breadcrumbs gently grilled on the big green egg served with Béchamel sauce and roasted potatoes….$26.00 / $15.00

Chicken Big Mamou – This is one of my all-time favorite a bold and spicy/sweet unique Cajun dish made popular by Paul Prudhomme, seasoned chicken cubes in a rich tomato based sauce with a blend of spices, trinity, loads of roasted garlic and scallions…$25.00 / $13.00

Opelousas Gumbo – Dried Shrimp, 7 steak, Okra and shrimp gumbo. This is a very unique gumbo using old school items from the true Cajun pantry “vacationing” for Cajuns that lived further inland would go to the beach and eat their fair share of oysters and fresh fish but would also sein net shrimp and dry them for the pantry. I made this gumbo at a place called Chellie’s in fat city and it was very popular. We make a rich stock with shrimp and crab accentuated with dried shrimp then we make a dark roux and add trinity, okra and diced 7 steak and cook that down and add it to the stock when simmered and tender we finish with natural gulf shrimp……..$30.00 / $17.00

Maque Choux with Crawfish – Corn sautéed with trinity, stock, seasoning and butter then studded with Crawfish…$32.00 / $17.00
