Friulian ingenuity and resourcefulness come together in our Blecs Verdi; a thoughtful homage to Cucina Povera and the traditions that shaped family tables throughout the region.

An expression of frugality and care, Blecs were originally “patches” of pasta designed to use each ingredient to its fullest and avoid food waste. Our Blecs Verdi has that same spirit, and is reimagined with intention, craft, and a distinctly Frasca sense of refinement.

Esoterra spinach is infused into pasta dough, which is then cut into delicate triangles with fluted edges. Glazed in a savory faraona ragu and finished with guanciale for depth and richness, this is a dish that feels rooted in history while fully alive in the present.

Dolce Far Niente returns in its original form, inspired by the gnocchi di susine from La Subida. Built on a base of 4-Year Rye, the cocktail takes shape as a milk punch layered with plum, lemon, Licor 43, , and Orange Liqueur before being stirred with Amaro Nonino and finished with an atomized veil of Forthave’s Mithradates VI.

The sweetness of plum arrives first, then slowly gives way to the spice and warmth of the rye. Rich, elegant, and especially fitting at the beginning or end of the evening.

The lamb arrives fragrant with herb salsa verde, rested over a silky green chickpea and yogurt puree bright with parsley, chive, and spinach. Pickled ramp rafano cuts through the richness with a tangy, grassy heat. Sugar snaps keep the plate alive. A smoked lamb bacon jus runs underneath it all, pulling every bite back to the lamb.

Pozze Smeraldine takes its name from the emerald pools hidden in the mountains of Tramonti di Sopra and reimagines the espresso martini through a different lens. Matcha Liqueur meets Suntory Toki whisky, concentrated strawberry syrup, and pistachio orgeat for a cocktail that is creamy, vibrant, and unexpectedly layered.
