At Flagstaff House, each menu starts with a simple philosophy: source the finest ingredients available, beginning close to home whenever the season allows.

Throughout the year, our culinary team partners with Colorado farmers, ranchers, and artisan producers who share our commitment to quality and craftsmanship. These relationships allow us to showcase the character of the region while celebrating the ingredients at their peak.

When an ingredient cannot be sourced locally without compromising quality, we look farther afield, selecting producers who meet the same uncompromising standards. Every ingredient is chosen with intention, whether it comes from a neighboring farm or across the globe.

The result is a menu guided not by distance, but by quality, seasonality, and a deep respect for the ingredients themselves.

Introducing Maine Lobster Lasagna.

A late-summer composition built around Maine lobster and the abundance of Colorado’s farms.

White Sonoran wheat pasta, made with flour milled by in Boulder, is layered with heirloom tomato and lobster, followed by a ragù of wild mushrooms, sweet corn, mascarpone and roasted Tropea onion. The tomatoes come from and , mushrooms from , and sweet corn from .

Gently poached Maine lobster from rests over a sweet corn velouté made from the cobs, with basil mousse woven throughout.

Chef Chris Royster and the team at Flagstaff House joined Slow Food Boulder County at Sunflower Farm for the fourth annual Plant a Seed for Change, alongside an impressive group of chefs who have earned Slow Food’s Snail of Approval, recognizing their commitment to food that is good, clean, and fair.

Chef Chris’ Succotash earned second place in the chef tasting, featuring Sunflower Farm’s Boston Marrow squash, Cherokee purple tomato, and fresh dill; sweet corn from Munson Farms; and braised pork belly from Buckner Family Ranch.

Slow Food is a global, grassroots movement connecting the pleasure of food with the pursuit of a food system that is good for people, good for the planet, and fair to the people who grow and produce it.

We’re grateful to Slow Food and Slow Food Boulder County, and to the farmers and producers who made the afternoon possible. We’re proud to have helped celebrate the people, places, and practices that shape our local food community.

Sous Chef James Roberts joins us to explore the inspiration, technique, and story behind one of his latest creations.

Originally from New Orleans, for Chef James this dish is a reminiscence of a childhood spent duck hunting with his father, and enjoying Palisade peaches during summer visits to Colorado.

The Duck Breast begins with the quintessentially New Orleans Sazerac cocktail and takes it somewhere distinctly Colorado. At its center are ripe Palisade peaches, worked through the dish in several forms and paired with the cocktail’s signature notes. Bourbon finds its way into the peach glaze and reduction, Peychaud’s bitters season the compressed peaches and compote, and Pernod brings the anise character traditionally supplied by absinthe.

The duck is sliced and served with toasted brioche and a round of seared Caña de Cabra goat cheese, then finished with peach compote, red veined sorrel, and citrus begonias. Rich duck, tangy goat cheese, ripe peach, bitters, bourbon, and anise come together in a dish that is the story of Chef James, told on the plate.

Join Chef Chris Royster among the sunflowers for Slow Food Boulder County’s () 4th annual Plant a Seed for Change.

On August 23, Flagstaff House will join an acclaimed group of chefs at Sunflower Farm for an afternoon celebrating Good, Clean, and Fair Food for All. Together with local farmers, food lovers, and culinary leaders, we’ll gather to celebrate seasonal ingredients, the people who grow them, and the traditions that shape our food system.

More than a meal, Plant a Seed for Change is an opportunity to connect with where our food comes from and support the farmers, producers, and practices that help keep our local food community thriving.

Featuring the Cure Farms Squash Blossom.

Squash blossoms from are filled with a delicate salmon mousse, then baked in dill butter until golden. Executive Chef Chris Royster sets them over baby squash, poached in court bouillon before being seared, and a bright take on panzanella: cherry tomatoes marinated in dill, lemon, and Moscato vinegar, warmed with radish and finished with sourdough brioche croutons.

The plate comes together with another spoonful of dill butter, fresh dill, and cranberry hibiscus leaves, whose bitter, sour edge cuts through the richness and brings the garden back into focus.
