we use color as a visual aid to mark stages of the roast and determine development level. color change occurs as coffee loses moisture during roasting and various chemical reactions occur.

Scooped by hand, charged into the drum, dropped the moment the roast says it's ready. A fan then pulls air straight through the beans to lock it in before residual heat can carry it any further into development.
