Pacific Northwest BBQ Association Washington State Spring Fair Recap 🔥
We made a plan and had a lot of fun. Had some wins, had some lessons. We tried some things and took a few risks that didn’t pan out, but that’s just how it rolls sometimes. We aren’t the new kids on the block anymore, but we’ve still got a lot to learn and will keep pushing.
5th Place Brisket (Snake River Farms) – Glad the judges agreed! This was an amazing brisket we all believed in
13th Ribs – Needed about 5 more minutes. Couldn’t turn in the pieces I really wanted as they just wouldn’t get tender. Thick, marbled ribs… and of course 5 minutes after turn-in they were spot on and delicious 🙄•
20th Pork – First time using chunks since they were so good, we rolled with it—but didn’t box it as well as we needed to. Not having 6 in a row from the same MM was tough to overcome, and the box got hit pretty hard on uneven sizing.
32nd Chicken – Tasted amazing, got nailed on em mushy and over-sauced. First run with legs, so we’ve got some learning to do on em.
Huge thanks to Heath Riles BBQ for laying down the flavor and B&B CharcoalCharcoal for keeping the fire rolling. Cooked on the drums, and a special shoutout to my buddy Landon for joining the SIF club—broke in his new drum on ribs this weekend!
