🌊☀️ ALL WORK & NO PLAY! 🏖️🔥

When you run a BBQ business, a “day off” doesn’t exactly mean a day off. 😂 I might get one day a week away from the smokers, catering events, prep, and running Big J’s SoCal BBQ — and somehow I’m still answering emails from the beach. 📲🔥

Yesterday we traded the BBQ pits for the Pacific Ocean and headed out to Huntington State Beach. 🌊 Took my son, my daughter, and Kalvin from the Big J’s crew with us for a much-needed Southern California beach day.

About 80 degrees, a nice ocean breeze, and plenty of sunshine. ☀️ The waves were a little choppy for the little ones, so we stayed around the shoreline where they could run in and out of the water and have some fun. 🌊🏃‍♂️🏃‍♀️

Running a small business means long days, late nights, catering jobs, BBQ smoke, phone calls, emails, and always thinking about what’s next. But every once in a while, you’ve got to step away from the smoker and remember what you’re working for.

Today it’s back to business. 🔥💨

Thursday afternoon in August — the kind where the heat’s been sitting on you all day and by 4 PM the only thing that sounds good is cold drinks and something that spent all night in smoke.

We’re mid-pork-shoulder season over here. That cut doesn’t get the same love as brisket or tri-tip, but ask any pitmaster and they’ll tell you — pork shoulder is the truth. It’s forgiving. It’s generous. It takes twelve hours of hickory and turns into something you pull apart with a spoon. No knife required. Just bark that shatters and meat so tender it barely holds together.

What we love about pulled pork is that it meets people where they are. Sliders for the kids. Tacos for the uncle who brought his own hot sauce. Straight on a plate with mac and slaw for the kids. It’s the ultimate crowd-pleaser at a time of year when crowds are hungry and nobody wants anything too fussy.

We’ve been getting more calls for midweek stuff lately — company lunches, rehearsal dinners on a random Tuesday/Thursday — and honestly, that’s become one of our favorite ways to work. No Saturday pressure. Just good food on a day nobody expected it.

August is rolling. Labor Day is closer than it feels. If you’ve got a date in mind, let’s lock it in while we’ve still got openings.

Midweek in August — the kind of Wednesday where the heat finally breaks just enough to remind you fall isn’t too far off. It’s the perfect day to talk about tri-tip.
This cut doesn’t get the same headlines as brisket, but out here in California, it’s royalty. We grill & smoke ours over hickory until it hits 130° internal, then let it rest under a loose tent of foil while the carryover heat does the rest. What you end up with is that deep, peppery bark giving way to slices so tender and pink they almost glow. No sauce needed. No distractions. Just beef, smoke, and patience.
We’ve been running the pits hard through this summer heat, and honestly, some of the best calls we get start with someone saying “I didn’t even know you could do tri-tip for a crowd.” You can. And we do. Rehearsal dinners, company lunches, birthday backyards — tri-tip is the move when you want people to remember the food without it feeling like a production.
August is halfway gone and September dates are already getting circled. If you’ve got a gathering coming up, let’s talk before the calendar fills up.

What an incredible weekend so far! Good Job Team!

The parade this morning was awesome, the crowd has been amazing, and we’re officially into Day 2 of the Mission Viejo BBQ Music Fest 2026!

We completely SOLD OUT last night, and today we’re burning through supplies faster than we ever expected. We can’t thank everyone enough for showing up, supporting small business, and sharing our BBQ with your friends and family.
