SEGOVIA FRIENDS!

Have you ever heard of a Guagua de Pan?

Every year in Ecuador, as November approaches, bakeries and homes begin to fill with these colorful, sweet breads shaped like little figures.

“Guagua” means baby or child in Kichwa.

Guaguas de Pan are traditionally enjoyed alongside Colada Morada, a warm, spiced purple drink made with fruits and Andean ingredients, as part of Ecuador’s Día de los Difuntos traditions.

For many Ecuadorians, this is more than bread.

It’s family.
It’s childhood.
It’s remembering the people who came before us.
It’s one of those flavors that immediately feels like home.

Segovia is known for bringing Spanish flavors to Bloomington, but Ecuador is also part of our story.

And this fall, we want to share a little piece of that story with you. 🇪🇨❤️

Guaguas de Pan will be available at Bloomington Community Farmers' Market next Saturday.

🇪🇸 Taste of Bloomington… what a day.

We honestly don’t know how to thank everyone who stopped by our booth.

On Saturday we cooked over 40 pounds of rice, served hundreds of small plates, answered countless questions about Spanish food, and by the end of the night… we sold out.

Seeing so many people try paella, discover what a bocadillo is, fall in love with our Spanish tortilla, and come back for another bite reminded us why we started Segovia.

This business began with one simple idea:
Bring people together around authentic food, cooked from scratch, and share a little piece of Spain here in Bloomington.

To everyone who waited in line, shared a kind word, recommended us to a friend, or simply gave us a chance…

And to our family, friends, and everyone who helped make yesterday possible—you are a huge part of this journey.
