Stepping up to our July pastry line up, we have the Watermelon Basil Almond Cake! 🍉

These cakes are one of our bakers most beloved recipes, finding their way on the menu in some fashion for over 6 months. The cakes are baked with almond flour and orange zest, and moistened by ricotta, then washed with a hot lemon syrup after bake. With the goal of adding refreshing taste and light texture, we then make the delicate Swiss meringue buttercream by infusing basil, watermelon + blood orange reduction, and vanilla. Garnished with absolutely gorgeous local flowers by our friend at Jenny Hite, dehydrated raspberry, and a brambleberry jam.

Key Lime Pie Danish

Buttery, flaky layers filled with silky key lime custard, topped with torched meringue, finished with candied lime and a buttery graham cracker crumble.

It’s everything you love about key lime pie—just wrapped in a Danish. This beautiful creation was made by our lovely bakers Jackson and Vivian! They are two of those people who make Recess what it is. They show up early, work incredibly hard, constantly challenge themselves creatively, and bring so much joy and positivity to our kitchen every single day! 🌞

🍋 Meet your new breakfast obsession.

Our Lemon Poppyseed Breakfast Roll is made with buttery croissant dough, layered with whipped mascarpone, lemon zest cream cheese, and poppy seeds for the perfect balance of bright citrus and rich, flaky goodness.

A huge shoutout to our incredibly talented baker, Julia, who dreamed up this pastry from scratch. 💛 Her creativity (and baking skills) are what makes recess so special🥰

Our Bomb Pop Lemonade is summer in a cup. Layers of tart hibiscus, bright lemonade, and butterfly pea flower create the perfect red, white, and blue, topped with a sprinkle of Pop Rocks for that candy-crackling nostalgia we all remember.

One sip and you’re back to the best Fourth of Julys—the ones that felt like they lasted forever.

And just like that, July’s pastry menu has dropped 🧨

For the Recess team, summer sure feels like it’s flying by!
But this pastry will be stopping you to pause and take in one glorious moment 🍑

Making its first debut for the July menu, the Peach Rooibos Croissant Swirl is reminiscent of slow summer afternoons, sharing peaches and cream and swinging rackets on the court. Taking inspiration from the unique and pungent flavors of the local NC white peaches, this laminated pastry is rolled tight, baked, and filled with crème fraiche pastry and peach jam. It’s then dipped in tempered white chocolate and topped with a rooibos tea glaze. It is lastly finished with fresh chantilly, sumac, and a peach slice.

🏕️✨ Meet your new summer obsession: Campfire Cookie.

A chewy cookie butter dough (think warm Biscoff cinnamon goodness), baked to golden perfection with crunchy graham cracker wedges tucked inside. Then we drizzle it with silky tempered chocolate and crown it with a fluffy torched meringue for that fresh-off-the-campfire finish. 🔥🍫☁️
