Most people only see the long lines.
They see the busy events, the festivals, the packed parking lots, the sold-out posts, and people walking away with a load of food in their hands.
And we are incredibly thankful for every bit of that.
But there’s a side of owning a food truck that most people never see.
They don’t see the equipment that decides to quit working at the worst possible time.
They don’t see the problems we deal with almost every single day just to keep the doors open.
They don’t see a bad weather day turn into a bad week.
They don’t see the 100+ hour weeks.
They don’t see the late nights, early mornings, exhaustion, stress, and the days we barely get to see our families because we’re trying to make this thing work.
I’ve had quite a few people assume that owning a food truck is a cash cow.
It’s not.
Not even close.
It’s a passion.
We put ourselves through all of this because we genuinely LOVE what we do. We love cooking our food. We love coming up with new things. We love watching someone take that first bite and seeing the smile that comes with it.
But most importantly, we love serving YOU.
And the truth is, YOU are what keeps food trucks like ours going.
Every order.
Every share.
Every person who brings a friend.
Every person who waits in that line.
Every person who comes back again.
You’re the reason we keep pushing when things get hard.
This isn't a pity post. We don't need anyone feeling sorry for us.
We've been through worse.
This is just another hurdle.
We'll figure it out. We'll keep pushing. We'll keep showing up.
But the next time you visit your favorite food truck, just remember that there are real people behind that window. People who are giving up a lot to be there.
And when you show up for us, it means more than you probably realize.
