Commodity coffee is graded for defects. Specialty coffee is graded for flavor.

To qualify as specialty coffee, a coffee has to score 80 points or higher by Certified Q Graders.

That’s why specialty coffee is built on traceability. We can tell you where it was grown, how it was processed, and the story behind every cup.

It doesn’t just mean better coffee, it means you know exactly what you’re drinking.

You guys always ask us how we develop our coffee. The truth? It’s a lot of trial and error.

Each of our coffee has its own roast profile which are built around these four things: charge temperature, heat as the temperature climbs, development time, and drop temperature. 

Sometimes it takes only a few roasts, but other batches can take longer to dial in. So we roast, cup, adjust, and do it again.

Great coffee doesn’t happen by accident. It’s the result of an intentional process with a lot of trial and error.

So the coffee you’re drinking today might not have been dialed in perfectly until batch 12.

June’s Roaster’s Choice is here.

Every month, our Roaster’s Choice gives us a chance to explore something a little different.

This month’s pick takes us to Bolivia’s La Paz region, where 120 families across seven communities grow coffee beneath a native forest canopy thick enough to meet the Smithsonian Institution’s Bird Friendly standards. That means the canopy overhead is real forest, not decoration.

In your cup, expect brown sugar and candied citrus zest over a rich, full body, finishing with lingering praline and cocoa.

But what makes this coffee special isn’t just how it tastes.

The APCERL cooperative has been Organic Certified since 2002 and Bird Friendly Certified since 2014. Their farms sit near Madidi National Park, one of the most biodiverse places on Earth, where the coffee farms double as wildlife corridors connecting protected forest habitat.

At a time when some of Bolivia’s best coffees are becoming harder to find, this is one we’re especially excited to share.
