For more than a decade, The Hive has partnered with Bansley Berkshire Ridge Farm, where Sean and Carol Bansley raise heritage Berkshire hogs with exceptional care. Often called the “Wagyu of pork,” Berkshire pork is prized for its deep marbling, rich flavor, and tenderness.
Our signature hog chop is butchered in-house, brined overnight, and finished over the wood-fired grill. While the seasonal accompaniments may change throughout the year, the chop itself remains a constant. Beyond the chop, we use the whole animal with intention: loins are brined, smoked, and sliced for our breakfast sandwich, while shoulders are ground into our house made breakfast sausage.
