Father’s Day Weekend at The Carlton Diner

First, let’s talk about today’s specials. As you know, Jen usually has cheesecake Thursday and explains her process to deliciousness. But as you know, Jen and crew are out of town so there is no recipe or detail about what almost made me a diabetic! Or so you think, which brings us to the tortellini.
This is a Jen creation and it is truly delicious. Tuscan Tortellini is a simple but elegant dish that will send your taste buds to another level. We sautee mushrooms, Italian sausage, sun-dried tomatoes, black olive and spinach in a little butter, then add chicken stock and the tortellini, simmering until the tortellini is tender. Then we finish it off with cream and Parmesan cheese until a velvety light cream sauce adheres to the pasta. The finished product is truly wonderful. Thank you Jen!

Our second special is our homemade baked meatball sub. We chained up Eileen downstairs and after she made her signature potato salad, she moved on to hand-roll a large bunch of meatballs! After baking them, we covered them in sauce then slow cooked in a large crock pot. They are tender, moist and delicious, served on a hard roll topped with provolone cheese and baked. They are accompanied by Eileen’s potato salad as a side, but you can get side you want!

For Father’s Day weekend, we are celebration dad with two specials:

NY Strip Steak and eggs, with 3 eggs, choice of potato and toast.

Big Daddy Breakfast, with 3 eggs, bacon, sausage AND ham with 2 pancakes or one of our malted waffles!

These are available all day Saturday and Sunday.

This week at The Carlton Diner

Before anyone (Jen) says anything, yes I know it’s a picture of pie. I did not have a picture of anything else we are serving as specials this week.
Speaking of specials, we have some new things coming your way which is why we have no pictures…yet. Watch for our stories all week to see what we are serving.

We do have an ALL-WEEK special, our first summer salad: The Bacon Blue Cheese Salad; Fresh Lettuce with tomato, red onion, green pepper, black olives, hard boiled egg, bacon and blue cheese crumbles with balsamic vinaigrette dressing (or whatever dressing you desire). Upgrade by adding chicken or shaved steak for a great start to salad season!

We are making Fresh Hand-rolled Meatballs for Meatball Subs on Thursday. Cooked in our Marinara Sauce and served on a fresh sub roll with provolone cheese and potato salad or your choice of a different side. Add grilled peppers and onions for the supreme meatball experience.

Rounding out the week for some great specials, we offer fresh Grilled Pork Chops (choice of 1 or 2) with 2 sides for a very special price. Order them plain or smothered your way.
Then we have Tuscan Tortellini, cheese filled tortellini with sun-dried tomatoes, mushrooms, black olives, spinach and sweet Italian Sausage in a light Parmesan cream sauce, served with soup or salad.

Since there is no cheesecake this week, we have Peach Pie and Apple pie and maybe a surprise dessert for Thursday.

This week at The Carlton Diner

We don’t need to tell you what kind of a weekend it was. Though we had power by early Sunday morning, so many of our people live in the tornado ravaged areas. So the combination of being unsure of our power situation for Sunday AND our employees affected, we made the decision to not open Sunday. However, we are open now!
We are offering 2 breakfast specials, for $6 each, from 7am to 11am for everyone, all week until Friday, knowing that many lost food from lack of refrigeration:

2 eggs, bacon or sausage, toast and coffee.

Malted Waffle with coffee or tea

As for the rest of the specials this week, honestly we are going to wing it and figure them out each day.

For Tuesday, we are going to have a roast beef melt and fries. The soup will be Stuffed Pepper.

No cheesecake this week or next.

It's Cheesecake Thursday folks and this one will need to tide you over for a few weeks. No cheesecake until June 25th as I'll be traveling, but Joe and the team will still be here and you can get all your other Carlton favorites!

For this week, we are introducing Chocolate Toffee Nut Crunch. I pitched this with pecans, but as I was planning it out, so kept thinking Almonds were a better fit. So that's what you've got.

I modified my standard cheesecake base to be half white sugar, half brown sugar, then I poured it into an Oreo crust and stuffed it with chopped Hershey Nuggets... The Creamy milk chocolate with toffee and almonds variety. After it cooled, I mixed up a batch of the same fudge filling I used on the Banana Buster Bar Cheesecake, though I folded in chopped roasted almonds instead of peanuts. I spread that on top, added whipped cream and sprinkled toffee bits over everything.

This one is quite yummy. Kind of like a Symphony Bar. The fudge is enough to have an impact, but it doesn't overwhelm the cheesecake batter.

This week at The Carlton Diner

Very busy last week and didn’t have time to post, and though we are busy so far this week, we have some time.

As a reminder, we are closed Saturday due to the run for Alex.

We are partnering with Hrutkay Farms again, but this time it for their ALL-BEEF HOT DOGS!
Hot Dogs will be available all week, either single or in a hot dog basket! The hot dog basket will feature 2 dogs with your choice of toppings and choice of 2 picnic sides of: potato salad, cole slaw, baked beans, Fresh cut fries, green beans or corn. Other sides are available for an upcharge.

Pies this week are Blackberry and Cherry. Cheesecake on Thursday.

It's Cheesecake Thursday folks and this one won by a landslide. (I even had people call and text me or stop me in person to ask for peach.)

Peach Melba, if you aren't familiar, is a classic dessert created in the late 1800s that featured poached peaches over vanilla ice cream with a raspberry sauce.

Our version features a cheesecake infused with peach puree and run through with ribbons of raspberry reduction. It's in a Nilla Wafer crust and is topped with a sauce of diced peaches mixed with homemade peach glaze and swirled with more raspberry sauce and a garnish of freshly whipped cream.

Next week is your last cheesecake before I take a two week hiatus to head to Canada to research maple syrup, poutine and freshwater fish. (I promise not to turn the last two into cheesecakes.)

Your choices for next week are:

Coconut Cold Brew (this DID get a lot of fans, so we will give it another chance before it goes in the hopper for a bit

EDIT: SOLD OUT It's Cheesecake Thursday folks, and WOW was I not expecting this to be as tasty as it is. Joe claims it may be his new favorite and the sample piece vanished like a pizza in front of teenagers. 😝

Buttermilk Blueberry Lemon was sparked by an ice cream flavor I saw once and thought would make a good cheesecake.

I made a buttermilk cheesecake base and poured it into a Nilla Wafer crust with lemon zest added to it. I made a batch of my blueberry pie filling and baked it into a jammy consistency, then added spoonfuls of that to the batter. The whole thing is topped off with our homemade lemon curd and freshly whipped cream. It's light and rich at the same time and tastes very much like spring. 🥰🥰

For next week, your choices are:

Coconut Cream Cold Brew - a Cold Brew flavored Cheesecake in a graham crust with coconut cream pie custard and fresh whipped cream on top.

Peach Melba - Peach cheesecake with with raspberry swirl in a Nilla wafer crust with a peach raspberry sauce and freshly whipped cream

This week at The Carlton Diner

The week prior to Memorial Day weekend, so we have some announcements to get out of the way.

We are open all weekend regular hours, however we WILL BE CLOSED TUESDAY AFTER MEMORIAL DAY. We will reopen on Wednesday, May 27 at 7am.

This week is Wings week. Starting on Wednesday, we will be featuring Whole Jumbo Wings all week until they are gone. This will be the last wing day until September.

Pies this week are: Banana Cream Pie and Pistachio Pie. On Thursday we will be adding Cherry Pie and Apple Pie as well as Jen’s Cheesecake.

It's Cheesecake Thursday folks, and this week's winner was Cosmic Brownie!

I'm pretty pumped about this one. I took a risk in making my regular cheesecake batter instead of chocolate because I was worried it would become way too "Death by Chocolate" for you all and it was the right move. This is delicious, and we'd already sold half a cheesecake by the time I got pictures and got it in the system.

For this one, I tested out a new brownie bottom based more off the dense fudgy style of a Cosmic brownie. It stays much chewier and softer than the brownie base I've been using. Then I poured in my standard cheesecake batter and added half a dozen chopped Cosmic Brownies to each cheesecake. I topped it with a soft, thick ganache based off the cosmic brownie topping and sprinkled on those colorful candy coated chocolate pieces that would be on the original. Whipped cream rounds out the blend.

It's rich and delicious, but not at all overpowering. Yay!

Your choices for next week are inspired by the upcoming warmer weather and by my trip to New Orleans last week where I enjoyed the traditional chickory coffee with my beignets. ❤️

Blueberry Lemon Buttermilk
This would be a buttermilk cheesecake with blueberry compote, lemon swirl and lemon curd topping in a Nilla Wafer crust for all sorts of warm weather energy.

Or

Chickory Brookie Chew
Chickory Coffee Cheesecake with chunks of Blondies and Brownies plus chocolate chips in a Oreo Crust, probably with a Vanilla Sweet Cream topping.
