Sometimes you just want to do something out of your wheelhouse.
Today's cooking lesson is
Smoked Garlic & Parmesan Chicken Legs.
1. Pat chicken legs dry to remove excess moisture.
2. Drizzle olive oil over chicken legs and massage into each leg.( just enough to allow seasoning to stick)
3. Season each leg with granulated garlic, kosher salt, black pepper and granulated onion. Massage into and around legs. Re season skin side up with above seasoning.
4. In the mean time I preheated my cook shack smoker to 225*
5. Place seasoned chicken legs on smoker rack skin side up and put 4-5 pieces of Applewood or Cherry wood in smoker. I used Apple Wood.
Close smoker up and let the smoke roll for 1 hour.
6. After 1 hour, turn legs over and generously brush Garlic & Parmesan sauce. ( Buffalo Wild Wings Sauce)
Return to smoker and continue smoking for 20 minutes.
7. Turn house oven on 400*
8. Pull legs out of smoker and place on sheet pan. Generously coat skin side with G & P sauce and a dusting of grated Parmesan cheese. Place in oven to crisp skin up and thermal thermometer registers 165-170.
9. Remove from oven and shower legs with granulated garlic and grated Parmesan cheese.
Where there's smoke there's flavor!
