We’re so thrilled to introduce you all to our new featured dish of the month, the ASC Hawaiian Kanpachi Crudo!
Bright and refreshing with bold flavors and a hint of heat – it’s a delicious way to highlight our ASC (Aquaculture Stewardship Council) Hawaiian Kanpachi from our friends at Blue Ocean Mariculture.

This is available at all Bamboo Sushi locations (dine-in only) until Sunday April 30th, so grab a bite while you can! 🥢

Happy National Seafood Month 🐠
Let's dive into our Ora King Salmon, which is featured in a couple of our dishes such as the King Salmon Carpaccio and our King Salmon Nigiri. This salmon specifically comes from New Zealand King Salmon as they have been perfecting their sustainable breeding practices for a quarter of a century. With a combination of sustainable selective fish-breeding practices such as moving their fish pens to let the seafloor heal and utilizing algae growth cleaning machines that bring in more nutrients, they have been able to create the unique breed of Ora King Salmon that you see in our restaurant today.

Please join us and our partners at Wild Salmon Center in urging the EPA to veto the Pebble Mine and establish the strongest possible protections for our friends in Bristol Bay.
