Celiac disease isn’t a “preference” — it’s a medical condition where even trace amounts of gluten (shared fryer oil, a cutting board, flour dust in the air) can cause real harm. That’s a totally different bar than just swapping an ingredient.
Most restaurant kitchens are built for speed, not that level of separation. And because “gluten-free” got trendy, a lot of places treat it casually instead of as the strict requirement it actually is for celiacs. Add in hidden gluten in things like soy sauce or spice blends, and it’s easy to see how people fall through the cracks — even at places that mean well.
It’s exactly why dedicated gluten-free kitchens matter. 🌾🚫
We are the ONLY dedicated GF kitchen in a 100 mile radius…the only one in Kern County! (Please correct us if we are wrong.) And, we are here to prove that GF food is good in 2026. Most people come in to get meal prep and have no idea it’s gluten-free. AND that feels so good — to be able to feed Celiacs safely while regular eaters can’t taste the difference. 😜
