we’re rolling out some new menu items over the next couple weeks to make the most of the summer season ✨

🦪 dressed oyster with preserved lemon-cucumber relish, pearl peppers, herb oil - bright, tasty, using great local summer produce!

🦀 fried soft shell green crab special with nuoc cham dressed corn and crab, sungold tomato, coconut-corn cream - available in limited quantities for a few weeks

🐟 halibut milanese with habanero-basil buerre blanc, seared radicchio castelfranco, guanciale-caper oil - cirtrusy and summery!

🐟 Half grilled branzino with cherry morita almondine, pickled fennel, fresh herbs - we ran it as a special and had to give it a permanent spot on the menu

Scenes from the kitchen this week:

🦀 Maine green crabs - an invasive species that prey on oysters and other shellfish. For 3-4 weeks out of the year when they’re molting, they have soft shells that are very tasty when fried. Keep an eye out for our soft shell green crab special over the next couple weeks.

🐟 Our first whole bluefin tuna breakdown at the restaurant with Minamoto SeaChange. We’ll use this beautiful tuna in our tartare and crudito, plus some upcoming specials

🍅 garden lookin good! that crab special includes sungold tomatoes and holy basil we grow ourselves.

Sometimes oysters and martinis start calling your name a little earlier in the day…especially on summer weekends. Starting this Thursday, 6/11, we’ll be opening up earlier at 3pm Thursday through Sunday.

From 3-5pm you can enjoy our raw bar items and a limited dinner menu on the patio or at the bar only. After 5pm, our regular dinner service resumes.

Updated summer hours:
Monday: Closed
Tuesday & Wednesday: 5-9pm
Thursday: 3-9pm
Friday & Saturday: 3-10pm
Sunday: 3-9pm

After a rough winter and (a few) boat repairs, is ready for the summer. 🌲🦪 We’ve spent the last few weeks getting the cages reset in the river and checking on our Lone Pine Pearls. A bit more work and TLC is needed over the next few weeks, but they should be on the menu soon!

in Brunswick, Maine, was one of the first farms we visited in 2020 after we started Austin Oyster Co, and their oysters have been some of our favorites ever since. More than that, they’ve been great partners to us as we’ve gotten our own farm off the ground.

Their farm is on the New Meadows River, right next to . The mix of cold, salty water from the ocean and algae-rich water from the river makes for an amazing oyster. But and his dad don’t just grow a great product, they do it while prioritizing community and sustainability.

When you see Bombazines on our raw bar menu, try a few (or a dozen). You might not be able to make it to Maine, but for a moment, Maine will come to you.
