Some dishes are easy to order any day. These two aren’t.
They’re the kind of dishes you might go looking for and still have trouble finding. And even at Mom’s, they only show up once in a while.
This weekend, September 5–6, Mom is making ဝက်ခေါင်းသုပ် (Pork Head Salad).
The pork head is tender with a little chew, tossed with crisp vegetables and Mom’s sour dressing.
You get the richness of the pork first, then that sharp sourness comes through and makes your mouth water. The fresh crunch cuts right through it, so the bite never feels too heavy. You finish one bite and already want another.
If you want noodles with it, Mom is also making ဝက်ခေါင်းကြာဇံသုပ်( Pork Head with Rice Noodle Salad).
The soft rice noodles soak up all that sour dressing, then you catch a tender piece of pork and a fresh crunch in the same forkful. It’s soft, juicy, a little chewy, and full of that bright sour flavor that keeps you going back for more.
These are the kinds of dishes we grew up eating in Myanmar.
Mom makes them here the same way we know them back home.
And because they’re not part of our regular menu, once this weekend is over, they’re gone again.
