Meet the number 2 in command at red spruce - Frances Demmert. Franny has been with us since the beginning ! 6 years (which is 12 years in restaurant years) and going strong. Her consistency and stability bring a grounding presence to our kitchen. She skillfully mentors our staff, working alongside them daily, helping them identify strengths and opportunities for growth. She is an outstanding leader and cook and we are so thankful for what she brings to our team. She is a BOSS. Every business needs a Frances.

We’re giving our dry-aged pork chop tocino the time it deserves.

After tasting today, we decided it needs one more day in the marinade so we’ll have it available tomorrow for dinner. It will be cooked over thai thaan coals and served with fermented mushroom fried rice, pickled tomatillos, and slivered onions.
