We’re giving our dry-aged pork chop tocino the time it deserves.

After tasting today, we decided it needs one more day in the marinade so we’ll have it available tomorrow for dinner. It will be cooked over thai thaan coals and served with fermented mushroom fried rice, pickled tomatillos, and slivered onions.
