Today is officially one month since we signed our lease for Varro at the Auburn Mall!!!
While some people spent the end of summer relaxing, we spent ours cleaning, building and driving around Maine hunting down restaurant equipment. 😂
When we first received the keys, the space was completely empty. Before we could move in a single refrigerator or prep table, we cleaned every corner, took measurements and started mapping out how an empty space could become the little café we had been imagining.
Since then, we’ve traveled across the state gathering refrigeration units, cooktops, prep tables and everything else needed to bring Varro to life. We had the plan from the beginning. The only thing that kept changing was the scale. A bigger refrigeration unit here, another prep table there, and suddenly a few quick pickups became a small tour of Maine.
Nearly everything we’ve collected has come with a story about the restaurant it once belonged to. The people we’ve met along the way have honestly been one of the best parts, and we love knowing those pieces are getting another life as part of Varro.
We also spent an entire day putting our glowing sign together by hand. Watching the name we had imagined slowly take shape was exciting, but seeing it light up for the first time was the moment the space finally began to feel like ours. It could probably be seen from space, but we’re perfectly okay with that. 😂
Now the big pieces are here and we’re moving into the next important phase: getting everything hooked up, completing final checks and preparing for the required inspections that will bring us another step closer to opening.
One month ago, the space was empty. Today, it’s filled with equipment, ideas and one very bright sign. There is still plenty left to do, but little by little, it’s becoming Varro.
We promise there will be coffee and a few special treats waiting at the end of it. ☕️
