A new offering from pastry chefs Abigail and Ching Yao, featuring a fusion of European technique and Asian flavors.

Served with a freshly baked croissant and housemade Tai basil butter with Maqaw 馬告. Also known as Taiwan mountain pepper, Maqaw is an indigenous Taiwanese spice offering a bright aroma of lemongrass and ginger that makes an excellent pairing with bright, herbaceous Tai basil.

Curious about the pairings you can expect to enjoy at next week's Sushi and Wine Pairing Dinner? See below for what Sommelier Tyler Francisco has planned with Executive Chef Jason Liang.

1st Course: Hermann J. Weimar Riesling paired with white fish offerings, Hirame and Madai.

2nd Course: Gai’a Thalassitis Assyrtiko paired with yellowtail Buri and Shima Aji

3rd Course: Lambert Midi Chenin Blanc paired with trout offerings, including Umi Masu and Niji Masu.

4th Course: Feudi del Pisciotto Catarratto Akami paired with tuna offerings, Chu-Toro, and O-Toro Uzura.

5th Course: Salem Wine Co. Evening Land Eola-Amity Pinot Noir paired with Wagyu Fried Rice.

6th Course: Bugey-Cerdon Sparkling Gamay paired with a French-inspired pastry dessert.

A first look at a few of the new dishes coming soon from and the Brush culinary team.

Crispy Spicy Tuna — crispy potato cake, spicy tuna, fresh jalapeño and cilantro, chile aioli, and Takoyaki sauce.

Mazemen Ramen — seared duck, chicken breast, sauce, Asian chives, poached egg, and bamboo shoots.

Smash Wagyu Sando — Wagyu beef patty, caramelized onion, American cheese, house-made milk bread, hamburger pickles, served with a house ponzu side salad.

On Wednesday, April 8th, presents six courses of exquisite sushi, each paired with a curated wine from our Sommelier, Tyler Francisco. This collaborative menu is available for one night only, and like our omakase experience at , it features fresh, seasonal ingredients only available for the evening.

Join us from 6 p.m. to 10 p.m. for an evening celebrating the flavors that shaped the last decade, along with a first look at what’s next from our new menu. Tickets include chef-led tastings and passed bites alongside sushi and yakitori grill stations featuring some of Chef Jason’s most iconic dishes, with cocktail samples and a curated sake and wine tasting.
