Now let’s go to Peru! 🇵🇪Tacacho is an Amazonian Peruvian dish made from mashed plantain, which makes it a pretty close primo to Puerto Rican mofongo. For this dish, Chef Hector Santiago keeps his signature Mofongo Verde and tops it with tuna ceviche featuring two ingredients closely tied to the Peruvian Amazon: cocona, a tart tropical fruit (he uses mango and passion fruit to match) and ají charapita, a tiny chile known for its bright, aromatic heat that packs a mighty punch in a small bite. (Chef says to be warned if you cannot handle the heat!)

Chamo, súbete al vuelo con nuestro chef!! 🇻🇪 This week Chef Hector Santiago is taking us to Venezuela for Hispanic Heritage Month with his twist on a classic from “La Tierra de Gracia.” Asado negro is a Venezuelan dish made by slowly braising beef in a dark, caramelized sauce of papelón, onions, garlic and spices. Its signature comes from the deep browning of the meat and sugar, giving the sauce its almost black color and a flavor that is savory, slightly sweet and just bitter enough to keep it balanced. For Mofongo Month, Chef Hector is serving it over Mofongo Verde, which is perfect for soaking up the rich braising sauce this dish is known for. There is also a great piece of folklore around Asado Negro: Venezuelans have long told a story that the dish began when a Caracas cook accidentally let a roast burn, then tried to rescue it by adding liquid and seasonings.

Week 1 of Hispanic Heritage Month at El Super Pan is una carta de amor a Puerto Rico!! 🇵🇷 For our Bandeja special, Hector Santiago is serving pinchos de pollo bien boricua! Seasoned chicken goes on the skewer, pa’ la parrilla, until the outside gets charred with caramelization. Y claro, el pancito va al final del palito!! If you grew up eating pinchos in Puerto Rico, tú sabes. The bread catches all the juguito and sauce from the chicken and gets a little toasted on the grill. Chef Hector calls it one of those small, random, details that comes with eating pinchos back home. El pancito al final del palito. Así mismo!!

THE BANDEJA | $40
The El Super Pan Bandeja is a separate special board made for sharing, with dishes inspired by Colombia, Venezuela, Puerto Rico, and Mexico.

Instagram keeps labeling this post as “AI” and we have no idea why. I took these pictures with a professional Sony Alpha camera. Then I made this incredibly simple 3-layer graphic in Adobe, without using any of their AI features. Weeks and weeks of hard work went into Chef creating this menu, the team learning how to execute it, and me then making all this content to help promote. This is the third time now I have posted this carousel, because we want you to see what we are doing for Hispanic Heritage Month. This post will be our third attempt at spreading the good word about what we are doing to celebrate our heritage. So hopefully IG will stop punishing our business for no reason and help us spread the good word. If you care to help, please share. It is not fair to our team that all our hard work is suppressed because of a label that isn’t even true.

Anyways, back to the scheduled program.

For Hispanic Heritage Month, Chef Hector Santiago is taking El Super Pan on a culinary trip through Latin America.

We start the trip in Colombia with shrimp ceviche plazero.

“Plazero” means plaza style or market style, referring to the kind of fresh, casual food associated with public markets and town plazas. Chef Hector’s version is a Colombian market style shrimp ceviche, built around bright, fresh seafood flavors.

It is a cool, refreshing start to the Bandeja before you move into the fried, grilled and slow cooked dishes on the board.

Our second taste of Colombia starts with the dough.

LATAM is short for Latin America and it is also the name of one of the region’s major airlines. That connection inspired the idea of “taking flight” through Latin America for Hispanic Heritage Month.

Chef Hector’s special menu is the itinerary.
