How a Jewish Girl survives Pesach Sweet Tooth! ✡️.
Growing up I loved the Easter Parade off Monument Avenue in my hometown! 🐰 I loved listening to the music, playing games, and best of all Funnel Cakes! I hated when Easter fell during Passover cause then I had to skip all the treats 🙈 I know super important when you’re 8 years old and can’t do what all the other kids are doing! 😖 Jump to modern day times ⏰ and a modern day Jewish gal 😻 Instead of fretting about what you’re missing during Passover celebrate the new recipes + creations!
Nuts & Seed Bar 🌰🍯🍫
1 cup almonds
1 cup pecans
1/2 cup pumpkin seeds
5 large dates (preferably medjool)
1 T hot or boiling water
1/3 cup almond butter
1/3 cup real maple syrup (or honey)
1/3 cup chocolate chips (for coating)
Add nuts to blender. Pulse for a few seconds until chopped. You’ll now have large mixing bowl with chopped almonds, chopped pecans and (whatever other nuts you like). Add the pumpkin seeds. Next: Add dates, water, almond butter, maple syrup and blend until a smooth paste forms (about 30 seconds). Pour the paste over the nut and seed mixture and stir to combine. Line a baking sheet or an 8 x 8 baking dish with parchment paper. Press it into your baking dish or baking sheet. Keep pressing the mixture down until it is about 1/4 inch thick. Melt the chocolate (microwave if you want). Spread the melted chocolate into a thin layer over the top of the granola bars. Place granola bars in the freezer to set up. I keep in the freezer and cut small bites as needed (or bigger bites when wanted!) 🍽
