When the sunshine finally peaks through and is done! My kind of Sunday 🍽 The rain has slammed down the city (and my mood) this weekend ☹️ but thankfully today is much brighter (and my fridge much fuller) 🥰
Tried out a recipe from today ⬇️.
Butternut Squash MacNCheese ☀️
forever on the hunt for dairy alternatives! Plus alphabet pasta can always lift up my spirits (check the B in my 🥣).
Ingredients:

1 small butternut squash (300 g)
1/4 cup plant based milk (I used almond)
2 tbsp extra virgin olive oil
1 small onion
2 cloves garlic
2 tsp sea salt
4 tbsp nutritional yeast
1 tsp apple cider vinegar
1 box chick pea pasta
* recipe calls for powder spices but I like to use the whole ingredient when I have it on hand (for onion + garlic)

🍴Roasted the butternut squash (in cubes or halved). I baked mine at 400 degrees F (200 C) for about 35-45 minutes. Sauté onions, garlic. Mix in blender or . Add milk + nutritional yeast + salt + vinegar (or half a lemon). Blend with Squash once it’s roasted. We like a bit of a kick 🔥 feel free to spice with red chili flakes, pepper, or jalapeño. 👏🏻 I made it ahead of time and the reheat tasted even better! 💋

Seeing DOUBLE 👀👀.
So a few asked my new after meeting with my nutritionist. .
1. Watching my portions.
2. Waiting to eat when I’m actually hungry. 3. Eating my carbs the end of the day.
4. Start with water when I have ‘hunger pains’ or green tea.
5. Eat your veggies first! Fill up my belly before protein- then fats/carbs 👏🏻.
If I’m going to lead my meals but veggies then they better be a party! 🎉🎉.
Two eggs in a zucchini nest! 🐥
Fill the whole with fresh spinach. Add your eggs to the ‘hole’. Top with ‘everything bagel’
Bake in cast iron pan 400 degrees for 10-12 minutes. Add nutritional yeast + nutritional yeast and avocado (healthy fats). Bob Appetite 🍽

How do I start a juice cleanse? 🤷🏼‍♀️.
Honestly I had no clue! 🧐 Everyone has been boasting about juice cleanses or their daily ritual of celery juice... but me I was like 🤔. So instead of going in blind- I asked my good friends at for so help! 🍑 Locally owned + operated they suggested I start first by adding in juices to my already established routine. 🛒 Instead of jumping deep into a cleanse- I could just add a few juices a day to my healthy eating! 🍽 Check out my insta story for the my Friday Funday learning more about Bamboo Juices 🍎🍌🍋🥒 What’s your favorite juice combo? ❤️

Make Toast Pear-able Again 😉.
I can never just have a ‘normal’ burger! 🍔 It’s gotta have some flair to it 🔥. Made these tasty bison burgers topped with sautéed onions + pears on my new favorite ‘toast’.
has perfected their cauliflower toasts + crusts! I used their original cauliflower sandwich bread [vegetarian + gluten-free!] Layered with the pears + onions sautéed in olive oil with a splash of soy sauce + turmeric. Bison burgers mixed with local bbq sauce, smoked paprika, + chickpea flour! All done prepped and delicious under 30 minutes!! 😎

How a Jewish Girl survives Pesach Sweet Tooth! ✡️.
Growing up I loved the Easter Parade off Monument Avenue in my hometown! 🐰 I loved listening to the music, playing games, and best of all Funnel Cakes! I hated when Easter fell during Passover cause then I had to skip all the treats 🙈 I know super important when you’re 8 years old and can’t do what all the other kids are doing! 😖 Jump to modern day times ⏰ and a modern day Jewish gal 😻 Instead of fretting about what you’re missing during Passover celebrate the new recipes + creations!
Nuts & Seed Bar 🌰🍯🍫

1 cup almonds
1 cup pecans
1/2 cup pumpkin seeds
5 large dates (preferably medjool)
1 T hot or boiling water
1/3 cup almond butter
1/3 cup real maple syrup (or honey)
1/3 cup chocolate chips (for coating)
Add nuts to blender. Pulse for a few seconds until chopped. You’ll now have large mixing bowl with chopped almonds, chopped pecans and (whatever other nuts you like). Add the pumpkin seeds. Next: Add dates, water, almond butter, maple syrup and blend until a smooth paste forms (about 30 seconds). Pour the paste over the nut and seed mixture and stir to combine. Line a baking sheet or an 8 x 8 baking dish with parchment paper. Press it into your baking dish or baking sheet. Keep pressing the mixture down until it is about 1/4 inch thick. Melt the chocolate (microwave if you want). Spread the melted chocolate into a thin layer over the top of the granola bars. Place granola bars in the freezer to set up. I keep in the freezer and cut small bites as needed (or bigger bites when wanted!) 🍽

Let’s talk about FOOD ANXIETY! 🙀.
Yes- it’s real! I love to - I enjoy going to numerous grocery stores- I even put up with allll the dirty dishes! 🤪 But I still have moments of being ‘too focused’ on eating healthy 🙈 Food should not be able control- it’s about balance. ⚖️
A few tips that keep me happily healthy (minus the anxiety) 🍽.
🔺Plan your weekday meals at home: Having options ready to go in your fridge will curb any hangry weaknesses.
🔺Be ready for the unexpected: A few on-the-go pick up options just in case! [may I suggest ]
🔺Pick the restaurant: When I meet up with friends I try to pick out the restaurant. So I know the menu already (or am ready to have a cheat meal at a new restaurant!)
🔺Do your research: No harm in looking at the menu ahead of time to know what options you have.
