Like this Salmon en Croute: Fresh Atlantic Salmon and creamy sautéed spinach wrapped and baked in puff pastry, served with herb hollandaise. Accompanied by pommes puree and julienned chef's vegetables, this dish (aka Salmon Wellington) brings reminders of Chef Wolfgang Gropp's authentic Escoffier training in Europe and Canada.
