"Get in, snoozer; we're going on a minty exploration." 🚗

Did you know that peppermint, Mentha piperita, is a cross between wintermint and spearmint? Get to know this seasonal fave with this collection of fun facts.

📜 Ancient Egyptian medical texts dating back to 1550 BCE included references to peppermint.

🤧 Peppermint has been used in Eastern and Western medicine as a treatment for indigestion, nausea, sore throat, colds, toothaches, cramps, and even cancer!

☀️ The best time to harvest peppermint is on a sunny day when the plant is just beginning to flower. (No joke!)

🍫 Peppermint can be added to your food in unique ways:
1️⃣ Brownie batter with fresh peppermint, hot chocolate with peppermint oil, or chocolate holiday bark with crushed peppermint candies

Having a joyous and celebratory holiday season doesn’t have to hinder your health! Here are 6 tips to navigate the holidays 👇

🏃‍♂️ Move your body. YouTube has a lot of free fitness classes — find what feels best!

🥶 Prepare for action. Prepare some freezer meals in advance to avoid relying on takeout.

⚖️ Keep your balance. Build a balanced plate of half fruits and vegetables, a quarter whole grains, and a quarter lean proteins will keep you energized.

🧠 Be mindful. Enjoy some of your favorite holiday dishes to satisfy your cravings!

💧 Stay hydrated. Holiday drinks can often dehydrate; stick to water and occasionally opt for a mocktail.

🥳 Be social. Stress less about your to-do lists and focus more on spending time with your chosen family and friends.

Explore the versatility of winter fruits with us! 🍋

The persimmon may feel intimidating, but its sweet and honey-like flavor is conducive to eating it raw or cooking it into your favorite bars, puddings, cookies, jams, or jellies!

Pomelos are growing in popularity, and we know why. It's slightly sweeter than a grapefruit, making it the perfect swap for other citrus fruits or use it raw in salads.

Meyer lemons have been around in foodie culture for a while, but we're here to say these lovely little citruses are for everyone! The moderately acidic but sweet flavor is the perfect swap into recipes that call for lemons. (For recipes that require a little sourness, like lemon bars, use half Meyer and half Eureka lemon juice for a well-rounded flavor.)

Finally, the kumquat is becoming more and more common in grocery stores. The sour, tangy, and lightly sweet fruit is perfect for marmalades, pickled, candied, or added to meat dishes or soups!

Regardless of how you celebrate, one thing always connects us: food.

Here are 4 tips to reduce food waste during the holidays.
1️⃣ Try to prepare “just enough” food. Use the guest-imator to calculate how much to prepare. (savethefood.com/guestimator)
2️⃣ Shrink servings to reduce plate waste. Use smaller dishes and serving — guests can always come back for seconds!
3️⃣ Anticipate leftovers and make a plan in advance. Provide reusable containers for guests, freeze them for a later date, or use them in creative ways – search "holiday leftover recipes" online!
4️⃣ Research how to donate unused items (or even used cooking oil!) locally.

Get pickled to support your immune system! Nearly 70% of your immune system lives in your gut; help support good bacteria with this recipe for this simple homemade take on kimchi.

Makes 2 pints

INGREDIENTS
1 head of napa cabbage, chopped into 1-inch pieces
1/4 cup + 1 tablespoon kosher or pickling salt
1/4 cup fresh ginger, peeled and diced (about one 3-inch bulb)
7 garlic cloves, peeled and diced
3 tablespoons fish sauce
3 tablespoons chili powder
1 tablespoon cayenne
1/4 cup fresh or about 9-10 small, dried peppers/chiles, chopped
1 tablespoon granulated sugar
2 large carrots, grated
1 medium daikon radish, grated
1 bunch green onion, chopped

DIRECTIONS
Place cabbage in a large bowl and sprinkle with 1/4 cup salt. Add water to cover cabbage, stir until salt dissolves, and allow to sit for 20 minutes. Drain cabbage and pat dry.

While the cabbage is in the salt water, blend the remaining salt and all other ingredients except for carrots, daikon, and green onion in a food processor until a paste is formed.

Toss cabbage with carrots, daikon, green onion, and enough paste to coat ingredients.

Place into large glass or ceramic vessel. Press down firmly with clean hands to allow juices to escape. If expelled water does not completely cover cabbage, use a clean heavy bowl or plastic bag filled with water to ensure it stays submerged.

Store in the refrigerator and enjoy for up to 4 weeks.

We're proud to play an integral role in Fried Chicken Wednesday at Spelman College! In a recent issue of Atlanta Magazine, Julianna Bragg covered this tradition at HBCUs, highlighting the cultural significance of this weekly meal.

Julianna pointed out that this college tradition goes much deeper than an opportunity for community-building between roommates and friends. Why is Boxed to Go more sustainable?

It's easy to use!
1️⃣ Request a Boxed to GO container from the cashier BEFORE swiping into the café. Your account will be debited $6 for one container.
2️⃣ Fill your Boxed to GO container with menu items from any station in the café. (Your container has to be able to close!)
3️⃣ When finished eating, empty and rinse your Boxed to GO container.
4️⃣ Return the Boxed to GO container to the cashier on your next visit to Alma Upshaw Café.

There is some fine print, though... 👇
✨ You can either receive a cleaned and sanitized Boxed to GO container or a carabiner that can be redeemed for a Boxed to GO container on your next visit.
💸 Should you lose or misplace your Boxed to GO container or carabiner and wish to continue using the program, you can pay $6 for a new container.

Here are 8 tips to plan a plant-forward holiday meal (or help your family plan one)!

Reminder: plant-forward refers to a style of cooking and eating that emphasizes and celebrates — but is not limited to — plant foods, focusing on craveable meals that support health and sustainability.

Take a side by making your sides a main event!
🍄 Add umami to give your food that "craveability" factor. Ingredients to include: dried mushrooms, roasted winter squash, toasted nuts, dried tomatoes, and even nutritional yeast.
🌾 Make your sides hardy by including beans, grains, nuts, seeds, and healthy fats.
🌱 Use simple swaps like replacing traditional dairy with plant-based substitutes and swapping beef or chicken stock for vegetable stock.

Get a little thrifty with the meat (your wallet will probably thank you later, too)!
🥕 Serve plants first (whether on a buffet or family style).
🥘 Make mixed dishes by incorporating meat into other dishes like casseroles, stuffed vegetables, etc.
🥦 Flip the ratios by packing main courses with vegetables. Aim for only two ounces of meat per serving.
🦪 Be non-traditional by featuring the meat as an appetizer only.
🙅 Have the best of both worlds by preserving traditional family recipes while swapping the rest with plant-forward alternatives.
