Snooze, an A.M. Eatery

10/05/2026

Somewhere between the first sip and the last bite of French toast, the to-do list stops yelling. That's on purpose. We build these rooms for mornings that don't hurry you out the door. Turn the sound up, then come find your booth.

Regular French toast doesn't get espresso cream underneath it, or a stuffing of house-made whipped mascarpone, or a top layer of coffee mascarpone, coffee syrup, cocoa powder, and espresso sugar. Ours does, because at some point in the test kitchen, "good enough" stopped being an option.

10/01/2026

We put five juices on the table and let people build their own mimosa, which sounds simple until you watch someone stand there for a full minute deciding between grapefruit and cranberry like it's a real decision. It is a real decision. Orange, grapefruit, pineapple, apple, or cranberry, your call. What's your go-to?

09/30/2026

There's a specific kind of happy that only shows up at the breakfast table, the kind where you're laughing before the food even gets there and somehow laughing harder once it does. We don't think that's an accident. Good company, a plate worth fighting over, and a Bloody Mary garnished like it's trying to be its own meal will do that to a person. Who's the one at your table who can't keep it together?

09/29/2026

Imagine saying no to this. Now imagine actually trying it, with the Paloma sweating on the table and the hash browns still crackling and a bite of French toast just sitting there daring you. We didn't make this easy on purpose, but we're not mad about it either. Tell us which one you'd have the willpower to skip, we'll be here not believing you.

09/28/2026

There's a very specific kind of confidence it takes to wear a flannel and shorts to breakfast in the same outfit, and we respect it completely. Fall-ish menu, fall-ish weather, fall-ish wardrobe choices. Nobody's fully committing to the season around here, and honestly, that tracks. Who else is only halfway dressed for fall?

09/25/2026

Not every idea makes it out of the test kitchen, and that's exactly how it should work. This episode of Beyond Breakfast goes behind the whiteboard, the sketch, and the first taste test to show how a new menu item actually gets built at Snooze. Some ideas get better. Some get killed. Both are part of the process.

Nobody plans to eat their breakfast burrito before they even sit down. It just happens, one block at a time.

Watch the Crispy Breakfast Burrito shrink the whole walk from Snooze to somebody's desk. By the time it lands on the desk, it's not exactly the same burrito that left the building.

If you've ever unwrapped "breakfast for later" and found out later was actually five minutes ago, this one's for you.

There's a reason your eye goes to one part of the plate before the fork ever moves.

Plating isn't garnish. It's not the last five seconds before the plate leaves the kitchen. It's a decision about what you notice first, what you save for last, and how a plate of food ends up telling a story instead of just filling a spot on the table.

We talk about height, negative space, and color the same way we talk about flavor. Because a plate that looks like an afterthought usually tastes like one too.

That's the part of breakfast most people never think about. We think about it every single morning.

More bubbles, more options, more reasons to brunch.

Big news for mimosa lovers: our Build Your Own Mimosa now comes with a choice of two proseccos. Make it exactly how you like it. Whether you're celebrating something big or just celebrating Saturday, we've got the bubbles ready. Come build your perfect glass.

Fall showed up to breakfast and brought dessert with it.

Say hello to the newest addition to our fall menu: the Pumpkin Pecan Pie Pancake. Think warm pumpkin spice, candied pecans, and all the cozy flavor of a slice of pie, reimagined as your Sunday morning stack. We only bring this one around for a little while each year, so grab a table before it's gone. Your fall breakfast plans just got a lot more interesting.

09/11/2026

There's a reason your plate looks the way it does.

Ingredients. Where they come from, why we're picky about them, and what we walk away from when something doesn't meet the bar. Good breakfast doesn't happen by accident. It happens because someone in the kitchen said "not good enough" more times than you'd think. Watch the full episode and see what we mean.

Eggs, bacon, hash browns, toast. On paper, that's the simplest order in the house. On the flat top, it's the one with nowhere to hide.

There's no sauce to cover a rushed yolk. No garnish to distract from soggy hash browns. Just eggs cooked exactly right, bacon rendered until the edges go dark and sweet, hash browns crisped on purpose, and toast that gets real attention before it hits your plate.

Simple food does not mean simple effort. We just don't make a big deal about it until now.

Bacon Day actually started right here in Colorado. Back in 2004, a group of CU Boulder grad students decided bacon deserved more than side dish status, so they gave it a whole holiday and picked the Saturday before Labor Day so the celebration could stretch into the long weekend.

What began as a small gathering in Boulder eventually went international, but we like knowing it started in our own backyard. Today, come celebrate the Colorado classic the way it deserves: crispy, plentiful, and shared at a table with people you actually like. We'll have plenty on hand.

Here's a season nobody warns you about: the quiet one. The one where the backpacks are by the door, the bus already came, and for the first time since June, breakfast is just yours.

No one's cutting your pancakes into smaller pieces. No one's asking for the syrup you already handed them. You get to have a full conversation, start to finish, with your coffee still hot when you finish it.

Come celebrate getting your mornings back.

We have a rule around here that if something can be stuffed, filled, or folded into something else, we're going to try it. This part of the fall menu is what happens when that rule wins.

The Smoked Salmon Benny starts with toasted focaccia instead of the usual English muffin, and the hollandaise itself has cream cheese worked into it, because we didn't think one creamy layer was doing enough for that smoked salmon.

The Pumpkin Pecan Pie Pancakes don't just get a swirl of cream cheese on top. There's a vanilla cream cheese filling built into the stack, then caramel sauce, sweet cream, and candied pecans over the whole thing.

The Tiramisu French Toast takes brioche, stuffs it with whipped mascarpone, and finishes it with espresso cream and coffee syrup that actually tastes like coffee. This one is basically dessert wearing a breakfast costume, and we're fine with that.

Nothing on this fall menu picks just one lane. Two chiles on one burrito. Three tortillas on one plate. Two tequila drinks that don't wait for noon. That's the kind of menu we ended up building this fall: a lot of small decisions that all come down to not wanting to pick just one thing. And this is only part of the menu.

Here's what made it to the table:

The Smothered Breakfast Burrito goes both directions on purpose: red chile and green chile, together, because asking us to pick one is like asking us to pick a favorite regular.

The Crispy Breakfast Burrito is exactly what it sounds like: griddled until the outside has some structure to it. We like a burrito you can hold with confidence.

The Breakfast Tacos come three to a plate, scrambled eggs and poblanos tucked into corn tortillas, lime crema on top, salsa and guac on the side for whoever wants to build their own.

And since a table like this deserves something in a glass: the Paloma and the Strawberry Morning Marg are both built on Los Pantalones Tequila, and both perfectly appropriate for a Tuesday morning. That's a hill we'll die on.

08/28/2026

There's an unwritten rule in breakfast that vegetables are the side dish. The Sweet Potato Veggie Smash Up breaks it on purpose.

Griddled sweet potato halves are the base, layered with pickled red onion, sautéed asparagus, a mushroom and onion sauté, and avocado, all topped with a poached cage-free egg. We finish it with house-made sriracha maple syrup and toasted h**p seeds, because a dish this bold deserves a syrup that can actually keep up with it.

It's built for the table that wants something a little different this weekend. Come see what breakfast looks like when the vegetables run the show.

Tomorrow morning, Wednesday, August 26th, we're launching a menu that only sort of believes in fall.

We're calling the new menu Fall-ish, because we couldn't fully commit and honestly didn't want to. There's pumpkin pecan pie pancakes with candied pecans and caramel sauce, and tiramisu French toast finished with espresso sugar, both very fall. Then there's a smoked salmon benny on toasted focaccia, red and green chili breakfast burritos with real heat, and breakfast tacos that don't care what season it is. Round it out with a Strawberry Morning Marg and a Paloma, because a good cocktail doesn't check the calendar either. Eight new items, one loosely themed season.
