Amish Snow Day Soup
A hearty, creamy soup loaded with ground beef, tender potatoes, vegetables, and corn for a cozy, satisfying meal.
Servings: 6
Yield: About 8 cups
You’ll need:
• 1 lb ground beef or ground sausage
• 1 large onion, diced
• 3 celery stalks, chopped
• 3 carrots, peeled and sliced
• 4 medium potatoes, peeled and cubed
• 2 cups corn, fresh, canned, or frozen
• 4 cups beef broth or chicken broth
• 1 can (10.5 oz) cream of mushroom soup
• 1 cup milk
• 1 tsp salt
• ½ tsp black pepper
• ½ tsp garlic powder
• 1 cup shredded cheddar cheese, optional
How to make it:
1. Cook the ground beef in a large soup pot over medium heat until browned. Drain any excess fat.
2. Add the onion, celery, and carrots. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
3. Stir in the potatoes, corn, and broth. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until the potatoes are tender.
4. Stir in the cream of mushroom soup and milk. Simmer for another 10 minutes, stirring occasionally.
5. Season with salt, black pepper, and garlic powder.
6. If using the cheddar cheese, stir it in over low heat until fully melted and the soup is creamy.
7. Serve hot.
Practical tip:
Cut the potatoes into evenly sized cubes so they cook at the same rate. If the soup becomes too thick after resting, stir in a small splash of broth or milk while reheating.
