A note from Chef Ray:
“Pad See Ew is one of my favorite Thai noodle dishes. I have made this dish repeatedly, and it never fails to make me happy. If you are a regular, you will instantly recognize my version of this dish and be stoked for its return. My rendition has marinated seared top round beef, fresh broccolini, and confit garlic, enrobed with Thai dark soy sauce that brings a savory caramelized sweet flavor that envelopes wide rice noodles. All garnished with scallions and a runny fried egg. This dish speaks to all my favorite parts of comfort food.”

This week’s special is here, and it’s not waiting around.

Udon Noodle Salad: Chilled udon noodles, spring greens, carrot-ginger dressing, sesame, and scallions.

A note from Chef Ray:

“I have a wonderfully refreshing noodle salad to celebrate the bright sunny weather we’ve been having after a rainy week. The dressing is definitely the star of this dish, featuring a bright, zesty flavor inspired by the small starter salad you get at hibachi restaurants. Combine this with chewy slippery udon noodles lightly seasoned with sesame oil and topped with tender spring greens, watermelon radish, and cucumbers. This noodle salad is satisfying and oh-so-delicious, bringing joy and happiness to your weekend adventures.”

Meet Sydney. 🥢

Marshall-raised, Gan Shan-adopted. Just over a year in as one of our FOH servers, and we’re so glad she found us.

Sydney will tell you she used to be super introverted, but somewhere along the way, she became the person who lights up a room. And when we asked her favorite part of the job? The people. Turns out, the right people make all the difference.

Off the clock, she’s helping tend to a full farm with five horses, four dogs, three cats, chickens, ducks, and a pond to tie it all together. Plus a serious crafting habit with jewelry, clothes, mixed media, you name it.

Her order:  the Gan Shan rice bowl with tofu and black bean chicken. Every time.

So happy to have you, Sydney.

Green curry chicken is on the menu again this week, and honestly, no notes.

Chef Ray’s Thai green curry brings the heat from Thai chilies, a bright hit of lime, and that smooth coconut milk finish. Marinated chicken thighs, broccoli, bamboo, and fresh basil. The kind of bowl that makes whatever is happening outside irrelevant.
