Happy October!!!

This month we have The Monte Cristo! The base is a Dijon Swiss Mornay Sauce. That gets covered in sliced Ham and Turkey. Sprinkle some more Swiss cheese on that. Then it gets dollops of Raspberry Lemon Basil sauce. The crust gets a French Toast Egg wash. After the oven we sprinkle a lil powdered sugar on top.

I wanted to shout out Chef Duffy over at Biscuit Head for the inspiration and also being a super cool guy!

Happy September everybody!

Introducing the Chicken MarZala

We start with a creamy Marsala sauce. Tons of mushrooms and herbs cooked in Marsala w**e. Then we toasted some Asparagus and threw it on there with some Chicken. We whipped up some lemon herb ricotta on top of that. After the oven it’s covered with some freshly grated Parmesan cheese and a lil parsley garnish!

Mozzarella cheese blend. Sliced Thai eggplant. Red peppers and onions. Your choice of Steak, Chicken, or Tofu marinated in Crying Tiger Sauce (Nam Jim Jaew). Coconut Curry Bechamel (its vegan!) swirl on top after the oven.

Garlic Olive Oil Base. Sesame Crust. Cheese Blend. Your choice of Shaved Beef/Lamb, Shaved Chicken, or Falafel. Green Pepper. Red Onion. Feta Cheese. After the oven it gets a refreshing Cucumber, Tomato and Pickled Veggie Salad and a Tzatziki drizzle.

¡Feliz cinco de mayo!

Este mes tenemos una pizza inspirada por los tacos de barbacoa. Comenzamos con frijoles negros cocinados lentamente en una base de Sofrito. Agregamos un poco de jugosa carne barbacoa cocinada lentamente. De ahí, cubrimos con nuestra gran mezcla de queso. ¡Después lo terminamos, cubriendo todo con cilantro fresco, cebolla picada con algunas especias y una crema de salsa verde.
