Doing these cakes in Mexico was quite the challenge. I couldn’t bring all the ingredients I normally use in the United States, and I quickly realized that many of the products are very different.

I don’t make box cakes. Every cake I bake is made completely from scratch, and that’s exactly how I wanted to make my mom’s 80th birthday cake. My goal was to give her something made with love and the same quality I always strive for.

I made a Red Velvet, a Carrot Cake, and a Tres Leches cake. They weren’t exactly the same as the ones I make at home because the ingredients are different, but I gave it my all to make them as close as possible.

A huge thank you to my sister Adriana for being by my side and helping me every step of the way. We truly made an amazing team.

In the end, we did it. Seeing my mom so happy celebrating her 80th birthday made every challenge, every late night, and every bit of effort completely worth it. ❤️
