After establishing our full time catering business of 17 years, our customers have begged us to open a location, so we are!! We will roll out our food kitchen initially, and see where the future takes us. We have been incredibly blessed by God to be able to fulfill our passion of Texas BBQ, and please so many people.

Day 5 of our history
Today's history covers a very weird time in our country, so we'll combine 2020 & 2021, and do our best to explain that period of time as gently as we can.
During the early part of 2020, businesses were asked to close down because of the thing we shall never speak of. We gave it some careful consideration, but after as much as we had already fought for to save our business, I had no intention of closing. We agreed to close the dining room for 1 week, and fill take out orders only.
It was also at this time the photo that seemed to break the internet was posted - The Masks Optional pic we hung outside. Seems most people agreed with our policy, with the exception of BBQ magazine writers, and so called BBQ experts. We were actually told by one "expert" that he would never grace our doors again, and to my knowledge, he hasn't. The people who matter to our business, the customers, actually came in droves, and we seemed to never miss a beat. During the week we closed the dining room, spontaneous tailgate parties broke out in the parking lot, and our team knew we were going to be ok. That also gave us an opportunity to once again expand our footprint, build some structures, and the top patio deck we have today.
Through it all, that was a very weird period, and one I hope our country never has to endure again. We actually prospered during this time, hired 6 employees that had been laid off from restaurants closing down, and we gave customers an option for breakfast, lunch, and dinner. Our motto for this period of time was "Eat BBQ Live Life...everything else is academic"

Day 4 of our history
This part is where it's gets emotional, because we absolutely loved being at "The Shack", but the universe had bigger plans in store for us. Without any pre-notice, we were served with an eviction notice from the former owners of Corral City in the Fall of 2018. We literally had a month to find a new home, or we were technically no more. As with every setback I've faced in my life, something always pops right up to show me the path, and I always equate it to God's path for Bryan.
Within 48 hours, the building we're currently occupying became available, almost like it was meant to happen. This location hasn't been without it's challenges, like most folks homes, but it is our home, and we're proud of it. We were able to negotiate a financial agreement with the owners of Corral City to extend our stay until 12/31, but that meant we literally had less than 90 days to fully gut a building and start from the ground up.
If you recall, we were closed the whole month of January 2019, and on Feb 1, 2019, were somehow managed to pull off a miracle and open. The crowds on our first day brought tears to not only me, but my staff as well.

Day 3 of our history. We loved "The Shack" as we called it. It was small, but manageable, however the crowds told us eventually we would need something bigger. We added the awning, that you now walk under every day, to give folks more seating outdoors, and still they filled us up. Change would soon be coming, we just didn't know it yet, or what it would be. Does anyone remember the bathroom on the front porch? It was literally a small storage building like you buy from the parking lot of Home Depot, but hey, at least you didn't have to walk over to the liquor store anymore when you had to go.

Countdown to 10yrs old (Oct 6)
Today's pics show what a silly idea it was to open a food trailer going into Winter (we really didn't think that one thru). We had people lining up in the cold rain, so Leslie would go take their order at their car to keep them warm and dry. We knew within 6 weeks that we needed something to keep folks dry and warm in the winter, so our 1st growth spurt came early. We literally built a building and attached it to our trailer, and voilla, we had a dining room - complete with 6 picnic tables. This worked for about 4 months.
Many people will remember the personal car hop service we had before this addition.

2 weeks from today we turn 10 years old, and it’s hard to believe. We will have some surprises in store for that day, but until then, we are posting some pics from our journey up to this point.
Our first one is our opening day in Corral City 10/6/2016. So many people will remember our 5 picnic tables that we had to move everyday because of the ants. It was a very humble beginning, but one that seemed to grow roots rather quickly.
Shout out to my buddy Trace Arnold for bringing the eye catching Ultimate Smoker out.
