These aren't all the ingredients. But, I realized how pretty this stuff is and how much fun I have doing it.

This particular batch is for two very important ladies in my life who want kimchi but without the spicy so I am making them a batch of white kimchi.

If anybody has any special requests for me to make anything, I am always available to make whatever you need for you to take home. Just let me know.

I have a bit of a dilemma that requires customer input.

Over a year and a half ago, we switched from Seed Oil to Beef Tallow. At the time, it made sense as it lasted longer and had a better flavor, and the belief in some circles...it was a healthier option.

When I first started, Beef Tallow was $38.00 for a 50lb box.

In the last 1.5 years, it has shot up regularly and is now $92.70 for a case. Each week, we change the fryers out, so take that times 2.

With the increases across the board on ALL food items, it is getting difficult to provide the food we want to cook, at a price that is accessible to the public.

I do not wish to get into any politics here, but the truth of the matter is that food costs have gone up extremely high. A case of Thicken Thighs used to cost me 30 bucks. It now ranges from $85.60 (todays price) to around $92.00.

ALL FOOD COSTS HAVE GONE UP ACROSS THE BOARD.

The only items that have gone back down were Eggs.

Transportation costs have also gone up, and some items I used to import, I no longer import, due to the tariff charges and I DO get invoices with tariff charges passed onto me.

We do NOT get special pricing like Grocery Stores do, which get pricing that is logical for that niche of business.

We pay what you would pay, only we get it shipped in bulk at our doorstep twice a week.

The question:

Do we keep the Beef Tallow Option, and charge more when prices are already high due to inflation and the economy?

Or

Do we shift back to Seed Oil, which will enable us to keep prices more stable, and maybe even lower some of the prices?

We are working on a menu that has some less expensive options in it, including a senior menu. Once we get that done, we will roll it out. But we need to settle the oil issue first.

The restaurant business is tough right now. All of our local small businesses NEED your support right now more than ever. If you don't support your local businesses, then you won't have them around. That means:

-No local jobs.
-No food options.
-No Taxes (Property, payroll, sales, occupation, etc.) being put back into our community and schools.
-No Payroll for employees to use in town at other businesses.
-No Donations for local causes.
-No Cross Business Support.
-No more Crab Rangoon.
-Another empty building in town.

We must ask ourselves is this what we want in our communities?

There is a lot to unpack here. We get it. But here we are none the less.

Thoughts on the oil? Thoughts on Affordability?

Erick and Maranda.
