From a mountainside village in Vietnam to the heart of Anthem, Mai’s story is one of grit, faith, and refusing to give up.
She grew up in the countryside, living off what her family raised and grew themselves. Life was simple, but not easy. After leaving home to continue school, facing rejection, homelessness, and starting over more than once, Mai kept chasing the life she knew was possible.
With just $200 from her father and his words in her heart, “Try first,” she built a business in Hanoi, later started again in Alaska, and eventually made her way to Arizona.
But one dream never left her.
“I always wanted to do a restaurant,” Mai shares. “When you come from Vietnam, you look for real Vietnamese food. I couldn’t find it.”
That dream became Pho Legend.
Every bowl of pho tells a piece of her story. The broth is simmered for two days with cleaned bones and bone marrow, no MSG, and a focus on food that feels good, not just fills you up.
Pho Legend is more than a restaurant. It is Mai’s way of bringing real Vietnamese food, family, and care to the community.
