On the menu for Thursday is Meatloaf with Mashed Potatoes, Green Chile Chicken Enchilada Casserole, Chicken Cordon Bleu over Orzo Pasta and Grilled Salmon with Bourbon Brown Sugar Glaze over Orzo Pasta. Our healthiest choice is Southwest Grilled Chicken Quinoa Bowl with Fresh Pico de Gallo.
