Located in a historic industrial building at the corner of First and Washington Avenues in downtown Albany, you can expect some of the best food in Oregon, served with equal parts eclecticism, classical preparation, and innovation. rom scratch here at the restaurant unless I can find a commercial product that is better than what I feel I can make (Beaufou mustards, Nueskes bacon, etc). We make the bread fresh every day. My pastry chef background ensures that all desserts are not only made in-house (including ice cream), but with the same attention to ingredients that the dinners receive. French chocolate, real cream without additives (read a cream label sometime), and pure Hawaiian cane sugar make our desserts worth boxing up some of your dinner to try. I was fortunate enough to be invited to the James Beard House in New York City to cook a meal representative of our style to show off the Northwest. We took great pains to ensure that the guests in New York received the Willamette Valley's food; we brought coolers of food on the plane and mailed our clothes to the hotel! We were ecstatic to go back to the Beard House to present “Willamette Valley Native Tribute”. We worked with The Confederated Tribes of Grand Ronde. This was the first time the Beard House featured Native American foods and it was a huge success.

If you’ve peeked through the curtains toward our back deck lately, you may have noticed something pretty exciting taking shape.

We’re building a fireplace. And because this is Sybaris, it couldn’t just be ANY fireplace.

Matt has long been a fan of Hampton Court Palace, famously Henry VIII’s favorite palace, and especially the massive fireplace in its historic kitchen. Like the absolute history nerd he is, he reached out to Hampton Court to ask if there were any books or resources where he could learn more about it.

Instead, they very kindly sent him the exact dimensions of the kitchen fireplace.

….So naturally, we’re recreating it right here in Albany.

Dennis and Alex, a father-and-son team of masons, are now bringing that vision to life on our back deck. And it’s already looking pretty spectacular.

There’s still plenty of work to be done, both on the fireplace and the back deck itself, so don’t start making outdoor dinner plans just yet. But we’re hoping to have the fireplace finished sometime around the holidays. (Crossing all of our fingers and knocking on all the wood!)

We have some big plans for this space, and we can’t wait to show you more as it comes together.

For now, you’ll just have to keep peeking through the curtains.

August has arrived, and with it, an entirely new menu at Sybaris.

This month is all about making the most of summer. You’ll find heirloom tomatoes from Sunrise Farm, sweet corn, fresh seafood, beautiful local vegetables, and a handful of new desserts we’re already looking forward to serving.

From our Cornflake Crusted Halibut and Chinatown Cioppino to Grilled Steelhead with summer succotash and our Chipotle Brined Grilled Chicken, August’s menu is filled with dishes that celebrate the season while staying true to what we love to cook.

And don’t skip dessert. This month’s lineup includes our Crème Brûlée with my mom’s spiced peach jam, the return of our signature Sybaris Chocolate Hazelnut Cake, and a warm blueberry bread pudding we call You’re Turning Violet, Violet.

If you’re joining us before dinner, our bar menu is served from 4 pm until close and features its own selection of dishes you can only get in the bar. Dinner service begins at 5 pm.

August is one of our favorite months in the kitchen, and we can’t wait to share this menu with you.

Some things are just too good to leave in the past, which is why, starting today, we’re bringing back the Classic First Burger to the Sybaris Bistro bar.

If you’ve been around the Mid-Willamette Valley for a while, you probably remember First Burger. Though the restaurant is no longer around, the burger - and that legendary First Burger sauce - have earned a loyal following over the years.

Matt and Janel opened First Burger in the late 2000’s, and years later, our Chef de Cuisine, Jason, took over the restaurant before eventually selling it. Now, Jason and Matt are back in the kitchen together, bringing one of Albany’s favorite burgers back to life.

The Classic First Burger features house-ground beef, American cheese, lettuce, tomato, onion, and the legendary First Burger sauce.

Available in the bar only for $10.

Want to make it a meal? Pair it with our crispy cornflake-crusted onion rings served with First Burger fry sauce, or our duck fat triple-cooked French fries with A1 aioli.

Our bar opens daily at 4 p.m. and stays open until we close (usually around 9 p.m.). Whether you’re stopping in for a burger and a beer, meeting friends for cocktails, or just looking for a great bite after work, we’d love to have you. Also, as with all good things, keep in mind that we have limited seating at the bar.

This morning, Chef Matt is busy preparing a fresh batch of our Double Raspberry Crème Brûlée. Whole raspberries are nestled beneath a silky raspberry custard, then each crème brûlée is finished to order with a crisp, caramelized sugar crust that’s made to crack with the back of a spoon.

Made from scratch in-house and available through the end of July, while Oregon raspberries are at their peak.

We were thrilled to welcome the newly restored Waverly Duck to Sybaris Bistro before it returned home to Waverly Lake.

Earlier this year, we were honored to host the Duck Dinner, raising ~$9,000 to help restore one of Albany’s most beloved landmarks. Seeing the finished project up close was a wonderful reminder of what a community can accomplish when people come together around something they care about.

A special thank you to Bob and Pete from Albany Parks for stopping by with the duck and for all the work that went into bringing it back to life.

Now the duck is back where it belongs in Waverly Lake, looking better than ever. Thank you, again, to everyone who joined us for the Duck Dinner and helped make this restoration possible. Here’s to preserving the landmarks that make Albany such a special place.

Thanks to this incredible community, we sold out and raised $2,200 for the Albany Firefighters Community Assistance Fund (AFCAF).

To everyone who stopped by, stood in line, tossed a donation into the firefighter boot, grabbed lunch, or simply helped spread the word: thank you.

A special thank you to Hill Meat Company for donating the wieners, Franz Bakery for donating the buns, and Van Vleet Meat for helping make it all happen. And a special shoutout to Lōnna from the Albany Visitors Association and Devyn Norman for assisting with hotdog assembly. Your generosity helped turn a simple Fourth of July lunch into something that will make a real difference in our community.

And, of course, thank you to the Albany Fire Department who partnered with us today and to everyone who made this fundraiser such a success.

We came hoping to raise a little money for a great cause. We left with an empty grill, an empty bun basket, and one very full firefighter boot. We’d call that a pretty good Fourth of July.
