Cream Cheese Chicken Enchiladas

Ingredients

2 cups shredded cooked chicken

8 oz cream cheese, softened

1 cup shredded Monterey Jack cheese

8 flour tortillas

1 can green enchilada sauce, 10 oz

1/2 cup sour cream

Directions

1. Preheat oven to 375°F.

2. Grease a baking dish.

3. In a bowl, mix shredded chicken, softened cream cheese, and part of the Monterey Jack cheese until creamy.

4. Spoon the chicken mixture into flour tortillas.

5. Roll tortillas tightly and place seam-side down in the baking dish.

6. Stir green enchilada sauce with sour cream.

7. Pour sauce over the enchiladas.

8. Sprinkle remaining Monterey Jack cheese on top.

9. Bake for 25–30 minutes, until hot, bubbly, and lightly golden.

10. Garnish with parsley or cilantro if desired.

Dessert Salads To Go

1. Snickers Salad

Ingredients

3.4 oz vanilla pudding mix

1 cup milk

8 oz tub Cool Whip

6 medium-large apples, chopped

6 Snickers candy bars, chopped

Caramel sauce

Lemon juice

Directions

1. Whisk vanilla pudding mix with milk until thickened.

2. Fold in Cool Whip until creamy.

3. Toss chopped apples with a little lemon juice to prevent browning.

4. Fold apples and chopped Snickers into the pudding mixture.

5. Drizzle with caramel sauce.

6. Chill before serving.

Ingredients

6.8 oz pistachio pudding mix

20 oz crushed pineapple

12 oz whipped topping

1/2 cup pecans

1 1/2 cups white mini marshmallows

Maraschino cherries

Directions

2. Fold in whipped topping.

3. Add pecans and mini marshmallows.

Ingredients

13.5 oz cream cheese fruit dip

8 oz whipped topping

1 teaspoon vanilla extract

20 oz pineapple chunks

16 oz maraschino cherries

10.5 oz mandarin orange slices

1 1/2 cups red grapes

1 1/2 cups banana slices

1 1/2 cups kiwi

1 1/2 cups mango

1 cup sweetened shredded coconut

Directions

1. Mix cream cheese fruit dip, whipped topping, and vanilla until smooth.

2. Drain pineapple, cherries, and mandarin oranges well.

3. Fold all fruit into the creamy mixture.

4. Stir in shredded coconut.

5. Chill before serving.

Four ingredients and a fridge is the entire recipe. No oven, no stovetop, no candy thermometer.

Take a block of cream cheese, eight ounces, and let it soften on the counter first so it beats up smooth. Beat that together with a cup of peanut butter, a cup of powdered sugar, and a teaspoon of vanilla until it's completely creamy with no lumps. Now take an eight ounce tub of whipped topping and fold it in gently by hand, don't use the mixer for this part or you'll flatten it, you want to keep all that air so the pie stays light. Spread the whole thing into a graham cracker crust, the store-bought kind is totally fine, and smooth out the top. Pop it in the fridge for at least four hours, though overnight is even better if you can stand to wait. Slice it cold straight from the fridge.

The fridge is doing more work here than most ovens ever do.
