That's right! Fresh roasted coffee actually needs to "rest" for a few days before brewing!

During roasting, a gas called CO₂ is released inside the bean.
Resting allows this gas to escape, preventing any sour or harsh flavors from dominating the cup.

And while you can brew freshly roasted coffee immediately, it will likely taste slightly sharp or overly acidic.

But we know that coffee is too important to have less than the best, so we recommend allowing your coffee to "rest" for 3-7 days, depending on the type of coffee, to ensure your morning cup tastes exceptional!☕️

This is one of the most common misconceptions about coffee roasting, and we hear it all the time: "Your house must smell amazing when you're roasting!"⁠

As much as we’d love for the roastery to smell like a fresh-brewed cup all day, the reality of the roasting process is a bit different. Truth is, it actually smells a lot like toasted grain or burnt leaves! ⁠

But as the coffee rests and releases trapped gasses, it begins to develop that deep, wonderful smell we've come to know and love.

Today we’re breaking down the pour-over and sharing everything you need to know to brew a fantastic cup at home!

Steal our go-to recipe below:👇️
Start with 25 grams of freshly ground coffee
For the bloom, add just enough water to wet the coffee and watch it expand and bubble.
Then add 150 grams of water in a circular motion.
Finish with the final 150 grams of water.

And that's it! Take your time and enjoy the process and you'll be rewarded with a fantastic cup of coffee that brings out all the best flavor characteristics your coffee has to offer.
