BEEF KEBAB RECIPE

Ingredients

1kg minced beef
200g wheat flour
100g soya flour
½ bulb garlic
1 dice ginger
Coriander
1 large onion
1 large green pepper
1 carrot
4 eggs
Black pepper
Salt
Cooking oil

Method

1. Grate onion, green pepper, carrot, garlic and ginger and place all in a mixing bowl.
2. Add the minced beef in the mixing bowl and mix with grated ingredients.
3. Beat 1 egg and mix it with the beef mixture.
4. Add salt, black pepper, chopped coriander and soya flour and continue to mix.
5. Knead the mixture until it forms like flour dough.
6. Dust the 'dough' with a little wheat flour so that it doesn't stick to the bowl.
7. In a separate bowl, beat the remaining eggs which will act as a final binder before frying them in the oil.
8. Pinch even sized balls from the 'dough' and then using your finger tips, roll each one gently on a clean flat surface until they form a cylindrical shape.
9. In a pan, heat oil. Use enough oil that will deep fry the kebabs.
10. When the oil is ready, dip the kebabs one by one in the bowl of beaten eggs and then carefully put then in the oil.
11. Fry them for 2-3 minutes (or longer for a crispy golden brown texture)/
12. Remove from oil and place on a cooling rack before serving.

BARBEQUE TURKEY RECIPE

Ingredients

Whole Turkey

Marinade ingredients
2 bulbs of garlic
Large piece of ginger
Salt
Tablespoon of oil
3 tablespoons of honey
3 tablespoons of sweet red wine
Black pepper
Cayene pepper (kamulali)
Tenderiser (young pawpaw fruit/ pineapple peels/ from the supermarket)

Method

1. Prepare marinade by blending all ingredients together.
2. Cut turkey into desired pieces and wash well.
3. Make slits on the turkey pieces and also slightly pull off the skin from the meat.
4. Smear the marinade all over the pieces, putting emphasis on the slits and under the skin.
5. Wrap pieces in an aluminium foil and keep in the refrigerator overnight.

To prepare barbeque fire
1. In case of light a charcoal stove or fire place until charcoal is red hot.
2. Place a mesh at least 2 feet above the fire.

Preparing the turkey
1. Remove the turkey from the fridge and allow it to defrost
2. Remove pieces from the foil and place on a clean dry surface.
3. Place pieces on the mesh above the fire when the fire has started producing ash or in case of a fire place, the firewood should be reduced so that it doesn't make flames.
4. Allow the first side to turn dark brown before turning the other side.
5. Check the pieces from time to time while controlling the fire making sure its not too high to burn the pieces before the meat is well cooked.
6. To check if its well cooked, use a sharp knife and cut through the larges piece up to the bone. If the is still blood , the it still needs more time. The same can be done for other pieces until its all readily cooked.
7. Serve with any dish of your choice.

SILVER FISH STEW (murine) RECIPE

Ingredients

1 onion
3 tomatoes
1 small green pepper
1 carrot
Royco
Tumeric
Corn flour
Silver fish (properly washed)
Handful of garden eggs
Salt cooking oil

Method

1. Heat oil in a pan and stir fry onions
2. Add tomatoes and make paste
3. Cut garden eggs into halves and add them to the paste. Cook them in the paste, stirring occasionally to prevent paste from sticking on the pan base.
4. Mix royco, tumeric and corn flour in a little cold water and add to the paste.
5. Mix well until garden eggs start softening and add the silver fish.
6. Add carrots and green pepper, salt, mix and allow to simmer for 2 minutes.
7. Add desired amount of water and allow fish to boil for 5-10 minutes and serve.

BEANS SAUCE

Ingredients

1 kg beans
1 large onion, chopped
3 tomatoes, chopped
1 green pepper
1 carrot
Handful of garden eggs or egg plants
Dice of ginger
Meat curry
Royco cube
Soy sauce (optional)
Salt
Oil

Method

1. Cook beans till they are soft
2. Separate beans from the soup
3. In a separate pan, heat oil and add onions
4. Add tomatoes, ginger and garden eggs and stir fry them till a paste is formed. You can add 2 tablespoons of soy sauce if you have it.
5. Add royco cube and meat curry and mix well
6. Add a little water and put add beans alone without adding soup. Add the green pepper and carrots as well.
7. Reduce the heat, cover and simmer for 10 minutes.
8. Add the soup while stirring until you make the level of desired thickness.
9. Continue to simmer for another 15 minutes and serve.
