When it’s blazing hot outside and a steaming bowl of phở feels like too much, phở gà trộn is the perfect alternative. The name tells you exactly what it is—phở (rice noodles) + gà (chicken) + trộn (mixed). Instead of a soupy bowl, you get a refreshing, flavor-packed noodle salad with a side of warm, umami-rich broth to sip on. It’s light but still deeply satisfying.
I’ve always loved dishes with a mix of textures, and this one nails it. The soft but slightly chewy rice noodles, the tender chicken with that bit of fatty skin, the crispness of fresh herbs and veggies, the crunch of roasted peanuts and fried shallots—every bite is different. And then there’s the sauce, a perfect balance of sweet, savory, and tangy that ties everything together. Toss it all up, take a bite, and it just works.
Back in Hanoi, when I was in university, there was an alley behind our campus where we had our go-to stall for phở gà trộn. It wasn’t anything fancy—just a few plastic stools, an old metal table, and a tiny kitchen that somehow managed to churn out some of the best food I’ve ever had. On hot afternoons, we’d escape there between classes, sitting shoulder to shoulder with other students, slurping up noodles and sipping the warm broth. It was the kind of meal that made you feel refreshed but still completely satisfied. That little stall became our unofficial hangout spot, a place where we’d catch up on everything from exam stress to weekend plans, all while devouring bowls of phở gà trộn.
