What is Couscous?

Although couscous looks like a grain, it's technically a pasta made with semolina flour from durum wheat and then mixed with water. Most Algerians will tell you that "the best couscous is my mother's" and
it is true because couscous is much more than a dish - it is a moment, memories, traditions, know-how and gestures that are passed on from generation to generation. The spirit of couscous is therefore the expression of life in a community. As there is no gathering without couscous, it is both a dish for the ordinary and the exceptional, eaten both at home and outside accompanying entire populations from birth until the end.

There are as many recipes for couscous as there are families and these even vary between regions with ingredients changing according to ecosystems. Couscous is also a reflection of craft skills, from the artisans who make the utensils related to couscous to the millers who transform the granules into semolina. Nowadays, as in the past, "rolling couscous" and its multiple preparations constitutes a plurality of knowledge transmitted orally, through observation and imitation, and we care to preserve this.

Did you know that Algeria's staple meal "couscous", dating back to the 10th century, was also added to UNESCO's list of Intangible Cultural Heritage. Despite major differences, Algeria, Morocco, Tunisia and Mauritania joined forces to highlight their shared love for the dish, including the practices and know-how that surround it, proving that traditions define us but also unite us.

Djouaz Uyazidh Su Zemmour is local slow-cooked chicken with olives, onions and garlic flavoured with Algerian spices and herbs 🌢

Our menu is a celebration of lamb, chicken, fish and vegetarian dishes. Starters range from TSH5 000 - TSH8 000, our couscous dishes and specialities mains range from TSH12 000 - TSH19 000 and our range of desserts (delicious Algerian pastries) range from TSH2 500 - TSH5 000. We also serve a range of refreshments including Atai s Na'Na - a traditional Algerian tea prepared with fresh mint leaves, a range of fresh juices and original lemonade.
