其中,他也曾與多位法國 M*F(最佳工匠級)主廚密切共事,
進一步精進其技術實力與專業標準。

專精於可頌與維也納甜酥麵包製作的 Julien 主廚,對整體製作流程擁有深入而全面的理解。憑藉多年國際實務經驗,
他成立了一間具全球視野的餐飲顧問公司,協助烘焙坊進行品牌發展、開店規劃與商品線打造。

在 Julien 主廚的親自指導下,Kyle 接受完整的可頌製作訓練,
並將其技術與理念落實於GUO BREAKFAST CLUB 的日常製作中,進而發展出品牌代表性的「零死角可頌」。

Chef Julien has long been dedicated to the field of French pastry. He has worked at several renowned pâtisseries and hotels in Montreal, where he built a solid foundation in both production and product development. His experience includes working closely with multiple French M*F (Meilleurs Ouvriers de France) masters, further refining his technical expertise and professional standards.

Specializing in croissants and Viennoiserie, Chef Julien possesses a deep understanding of the entire production process. Drawing from his extensive international experience, he went on to establish a globally oriented culinary consulting company, supporting bakeries in brand development, store openings, and product line creation.

Under his direct guidance, Kyle was trained in croissant-making, translating Chef Julien’s techniques and philosophy into daily practice at GUO BREAKFAST CLUB, where the brand’s signature “zero dead-angle” croissant was developed. Chef Julien’s meticulous approach to croissant-making reflects a broader philosophy of life and aesthetics. Through his professional direction, the croissants achieve exceptional layering, aroma, and texture, combining visual elegance with competition-level depth of flavor. Many visitors describe GUO’s croissants as crisp on the outside, soft and airy within, with clearly defined aromatic layers, making them a standout highlight of this design-driven café in Yunlin.
